Good Morning! I hope your weekend is going well! Let me tell you, I was really looking forward to a little bit of down time. Last week I was really busy around the house and with Cozy Country Living. I also added my morning workout back into my routine, which I had really been missing. When my children started school last month, I thought I would just kind of fall back into that, but that didn’t happen. It does feel good to get active again and it will give me more energy throughout the day which I really need with these kiddos of mine! 🙂 Because it’s apple season, I’ll be starting my early mornings this week with a cup of hot coffee and one of these fresh Apple Raisin Muffins!
When I headed to the fruit and vegetable stand down the road last week to grab some cabbage to make my Slow Cooker Golabki for my son’s birthday (he requested it!), I picked up a 1/2 peck of fresh Cortland Apples! I absolutely LOVE this time of year and nothing beats fresh produce, especially apples picked the same day! We are all actually heading out to pick our own apples this afternoon, so I will be sure to share some really pretty harvesting, Fall pictures with you all later on this week. Oh, I wish I could have every one of you smell the wonderful Fall aromas that we have here in Western New York. We are surrounded by vineyards and orchards and when you step outside each morning, it’s just amazing!
Okay, back to the muffins! These Apple Raisin Muffins are really easy to make and are more of a healthy, not overly sweet type muffin, which makes them perfect for quick breakfasts or snacks. Chopped fresh apples, applesauce and raisins are baked in a whole wheat blended batter swirled with cinnamon and nutmeg for a tasty Fall breakfast. My youngest son said, “Mom, there is even real apples right in here!” Of course there is! I love that they get so excited about Real Food! My 3 year old likes to pick all of the raisins and apples out to eat them separately, but hey, that’s exciting for her.
Whether you pick your own apples this Fall or buy them at your local stand or grocery store, I hope you give this yummy muffin recipe a try!
Ingredients
- 1/4 cup unsalted butter, softened
- 3/4 cups brown sugar
- 2 eggs
- 1/4 cup canola oil
- 1 tsp. vanilla
- 1 1/2 cups whole wheat flour
- 1 1/2 cups all purpose flour
- 2 1/2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1 1/2 tsp. cinnamon
- 3/4 tsp. nutmeg
- 1/2 cup applesauce
- 1 cup 2 % milk
- 1 large apple chopped small (about 1 cup)
- 1 cup raisins
Instructions
- Preheat your oven to 375 degrees.
- In your Kitchen Aid Mixer, cream together the butter and sugar until combined.
- Add the eggs, vanilla and oil and mix.
- Add the flours, powder, soda, salt and spices and mix.
- Add the applesauce and milk and mix until well combined.
- Fold in the the chopped apple and raisins.
- Fill your lined muffin tins 3/4 full with the batter.
- Bake for 16-18 minutes or until a tooth pick inserted into the muffin comes out clean and the edges are golden brown.
- Serve warm or room temperature.
- Makes about 2 dozen muffins.
- *To freeze, cool completely and then store in a freezer friendly container or plastic bag.
