This week I am having a bit of an “off” week. I don’t know if it’s all the pollen flying around outside or my energetic children who have my mind all over the place, but whatever it is, I am hoping to feel refreshed and back to myself after this upcoming weekend. I had a craving for some chocolate yesterday, so I decided to make these wonderful cheesecake squares for myself! Just kidding…I made them for everyone, but they did make me feel better:) My children could not wait for these to come out of the oven, but were very disappointed when I informed them that the cheesecake had to cool off and be chilled first. I explained to them that good things come to those who wait and after being so patient, they were able to have a late night dessert even though it was past their bedtime. It was a nice ending to a long, busy day. These creamy cheesecake squares will serve at least 12 people and are perfect for any family get together. Have a fantastic weekend and enjoy!
Ingredients
- For The Crust:
- 1 (14 oz.) package Oreo cookies, processed in food processor to fine crumbs
- 1/2 cup unsalted butter, melted
- For The Cheesecake:
- 16 oz. cream cheese softened
- 1/2 cup sugar
- 1/4 cup half & half
- 2 eggs, lightly beaten
- 1 Tbsp. lemon juice
- 1 tsp. vanilla
- 1/2 cup mini chocolate chips
- Topping:
- 1/4 cup mini chocolate chips
Instructions
- Pre heat the oven to 350 degrees.
- In a mixing bowl combine the Oreo crumbs and the melted butter.
- Mix well.
- Pour the crust into a 9 x 13 pan( if you like a thicker crust and filling you can use an 8 x 8 pan) and pack evenly with a fork.
- Bake for 12 minutes and then let cool.
- Cream the cream cheese with a mixer and slowly add the half & half, eggs, vanilla, lemon juice and sugar.
- Mix together well.
- Fold in the 1/2 cup mini chocolate chips with a spatula.
- Pour onto slightly cooled crust and bake 20- 25 minutes or until the center is set.
- Remove from oven and sprinkle with 1/4 cup mini chocolate chips.
- Place in the refrigerator or freezer to cool and chill.
- When the cheesecake is completely chilled, cut into squares and serve.
- Serving size will depend on how large you cut the squares.

All my favorite put together as one! Love this! My kids are the same way when it comes to waiting for the treats to cool. I will usually make it after they go to bed so it’s ready for the next day. But then it usually turns into breakfast!
