Breakfast is by far the most important meal of the day! It fills your tummy up in the morning, gives you energy to get moving and can help you focus throughout the day. I like to start our mornings with a bit of protein too. My family is always hungry when they wake up, so adding a few eggs to our meal in the morning helps everyone stay full until lunch time! These delicious Mushroom, Onion & Swiss Omelets make such a wonderful breakfast along with some fresh fruit or juice that you may even consider serving them for dinner on occasion too!
On my last trip to the grocery store I picked up some Cremini Mushrooms. In the past I haven’t been such a big mushroom fan, but as I grow older my taste buds are changing. My husband loves mushrooms so I knew these would be delicious in anything. Cremini mushrooms have a slightly firmer texture to white mushrooms and we think they are much richer in flavor too.
Since omelets are one of my favorite things to make for breakfast, I decided to add these to our omelets this morning. If you caught my Four Cheese & Tomato Omelet post a few months back, then you know how much I love my neat little (affiliate) Omelet Pan!
It gives you a perfect omelet every time easily and the possibilities are endless. I even have 2 pans so I can whip up omelets quickly for our family of 6! Don’t have an omelet pan, that’s okay! You can still make this yummy recipe in a small skillet and just fold the omelet over! 🙂
After sauteing my sliced onion and mushrooms in a little butter in the omelet pan, I remove them to a small bowl. I quickly beat together 2 eggs (perfect for 1 omelet) roll the eggs in the pan until almost set and add the mushroom and onion mix along with some shredded Swiss cheese.
Simply use the handy little spatula to roll up the omelet and you’re all set! A “fancy”, perfect stuffed omelet served right from your own kitchen!
These omelets only take a few minutes to make, so why not treat yourself and your family to a warm meal like this in the morning! It’s a great Back to School breakfast and I think they will love it!
Ingredients
- 1 cup Cremini Mushrooms, wiped clean and sliced
- 1 small onion, sliced
- 1-2 Tbsp. butter
- 4 eggs
- 1 - 1 1/2 cups Swiss Cheese, shredded
- salt
- pepper
- parsley to garnish
Instructions
- Saute your mushrooms and onions in a little butter in your pan over medium-high heat.
- Remove and set aside in a small bowl.
- In another small bowl, quickly beat 2 eggs, add a splash of half & half or milk and pour into your pan, season with a little salt and pepper and cook over medium-high heat.
- When the omelet is almost set, add your mushroom and onions along with the shredded Swiss Cheese.
- Roll or fold over your omelet and serve warm with fresh fruit or juice.
- Serves 2.
