When January comes around, I’m always looking for new and fun ways to improve our eating habits. After the Holidays I want to start fresh and that begins with making good food choices when it comes to meals and snacks. I’ve found that just adding a few more servings of fruits and vegetables into my diet has a huge impact on the way I feel and how productive I am during the day.
One of my favorite go-to snacks are blueberries! Blueberries have just 80 calories per one cup serving and they can help you meet your daily recommended intake of fiber too. I also don’t feel guilty when I eat more than 1 cup! 🙂 They can easily be added to your smoothies and are great to take along with you to work or to run errands if you are in a hurry. This week I put together these simple, healthy & filling Blueberry & Granola Yogurt Parfaits for an after school treat and boy were they delicious!
Western New York is covered in a lot of snow right now so I can’t just run down to our local fruit stand and pick up a few quarts of blueberries like I normally do in the summer months. Fortunately, fresh blueberries can be found year round in our favorite grocery stores! The domestic blueberry season runs from April to September, and once that season is over, imports of juicy, plump blueberries are still coming in from Chile, Peru and Argentina so we can always enjoy them just like we do in the summertime!
I’m always trying to come up with new, fun, and healthy snacks to make for my hungry kiddos when they come home from school. My mother bought me these cute glass dishes for Christmas and I knew they would be perfect for a tasty, fruity parfait. This past weekend when I went to the grocery store, I put a few packages of fresh blueberries in my shopping cart. I wanted to be sure I had the most important ingredient to make these for my children after their first day back to school after Winter break.
This yummy blueberry snack looks and tastes delicious! The best part is, is that they only take about 5 minutes to prepare and assembling them couldn’t be easier! Get out your favorite small glass serving dishes (a small mason jar would work great too) and rinse your blueberries.
Fill the bottom of the glasses with blueberries, add your favorite low fat Vanilla Greek yogurt, a layer of crunchy granola, another scoop of yogurt and then top the parfaits with a generous handful of those fresh, juicy blueberries.
I made these parfaits a few hours before my kids got home, so I covered the parfaits with plastic wrap and popped them in the refrigerator.
My family just loved these and using all of those fresh blueberries in this parfait made it a special treat. My younger 2 thought these were very fancy in the special glasses too. You can even drizzle a little honey over the top of your parfait for a special touch. If you’re looking for simple ways to encourage healthier eating habits for your family this year, give this blueberry parfait a try! You might even want one for dessert!

Ingredients
- 1 large package fresh blueberries
- 1 container vanilla low fat Greek yogurt
- 2 cups crunchy granola (homemade or store bought- we like simple honey flavored)
- Honey for drizzling on top (optional)
Instructions
- Rinse your fresh blueberries.
- In 4 small glasses or mason jars, fill the bottoms with blueberries evenly.
- Cover the blueberries with a layer of yogurt and smooth.
- Cover the yogurt layer with the crunchy granola.
- Add another layer of yogurt and smooth.
- Top with a generous handful of the fresh blueberries and drizzle with a little honey if desired.
- If making ahead of time, cover the parfaits with plastic wrap and store in the refrigerator.
- Makes 4 good sized parfaits.
- Enjoy!
