In a little over a week, my kiddos will be headed back to school! I can’t believe how fast this Summer has gone by. As much as I will miss having them home with me all day, it always is nice to get back onto a more structured schedule. Are your children back to school already?
I froze a lot of breakfast meals ahead of time in preparation for the new school year like Baked Oatmeal, Quick Breads and Burritos. They are ready to warm up right out of the freezer, along with several varieties of muffins and a few dozen of these tasty Breakfast Cookies. Trust me- you will want to skip the box at the grocery store, and send your children to school with this Homemade version!
These Apple Harvest Breakfast Cookies are a great, on the go breakfast or snack that you and your family will love! Apples, raisins, and pecans are baked with old fashioned oats with warm cinnamon, nutmeg and cloves. These soft cookies will make your whole house smell like fall when they are baking and make a wonderful after school snack warm right from the oven.
There’s nothing I love more than when my children come running in the house after school to find out what I am baking because they can smell the sweet aroma being carried out of the windows by the crisp breeze as soon as they step off of the bus!
These cookies can be made ahead of time too! They are freezer friendly and warm up nicely in the microwave in only a few seconds. It’s always nice to have a few things on hand for those mornings that don’t always go as planned. Even after my children get on the bus and the house is quiet, I like to enjoy one (or two) of these with my coffee! 🙂
Ingredients
- 1/2 cup unsalted butter softened
- 3/4 cup brown sugar, packed
- 1 egg
- 1 tsp. vanilla extract
- 1 cup unsweetened applesauce or homemade
- 1 cup all purpose flour
- 1/2 cup whole wheat flour
- 1 1/2 cups old fashioned oats
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. salt
- 1 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/4 tsp. ground cloves
- 1/2 cup raisins
- 1/2 cup finely chopped apple
- 1/2 cup pecans, measured then roughly chopped
Instructions
- Preheat your oven to 375 degrees.
- In your Kitchen Aid Mixer, cream the butter and sugar until nice and fluffy.
- Beat in the egg and vanilla.
- Add the applesauce and mix well.
- Add the flours, oats, powder, soda, salt and spices and mix until incorporated.
- Mix in the raisins, chopped apples, and pecans.
- Drop dough by large Tablespoonfuls onto parchment lined baking sheets.
- Bake for 15 minutes or until light golden brown around the edges.
- Remove from the oven and place on a cooling rack.
- Serve warm or room temperature.
- Makes about 3 dozen.
- *To freeze- let cool completely and store in a freezer safe container or plastic bag.
- Enjoy!
