Muffins are my favorite food to make when my family has a busy week. They work wonderful for breakfast or even a quick snack. These Banana Walnut Chocolate Chip Muffins are delicious with a hot cup of coffee and are also freezer friendly. If you have a day when you are doing some baking, whip up a batch of these and freeze them. With all of my efforts to be organized and have most of my family’s meals planned for the week, sometimes things don’t go as planned and it is always nice to have something quick to eat available right in your own freezer. What foods do you make at home in preparation for a busy week?
Ingredients
- 1 1/2 cups whole wheat flour
- 1 1/2 cups all purpose flour
- 1 cup brown sugar
- 1/2 cup white sugar
- 2 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 cup unsalted butter, softened
- 2 eggs
- 1 tsp. vanilla
- 3/4 cup buttermilk
- 3 large, ripe bananas
- 1 cup roughly chopped walnuts
- 1 cup semi sweet chocolate chips
Instructions
- Preheat the oven to 375 degrees.
- In your Kitchen Aid mixer, whip the butter until fluffy, then add the sugars and cream together.
- Add the eggs, one at a time, scraping down the sides and mixing well.
- Add the vanilla and bananas and mix together.
- Sift the flours, soda and salt together and slowly add to the mixture alternating with the buttermilk.
- Stir in the walnuts and the chocolate chips.
- Fill the lined muffin tins with the batter about 3/4 full.
- Bake for 18-20 minutes or until a toothpick inserted into the muffin comes out clean.
- Makes 24 muffins.
