June is a busy, busy month for us. Here in Western New York, most schools are still in session with a few more weeks to go! With longer days and not enough time in them, it’s so important to have at least a few great dinner ideas on hand for those crazy weeknight evenings. For us those are the evenings when my boys have baseball. They usually have to be at the field by 5:15, so that means we have to eat an early dinner, and I have to make sure it’s one that’s going to fill those growing, active boys up too. This yummy fruit salad, aka- The Best Fruit Salad is easy to make, can conveniently be made ahead of time and is perfect with a slice or two of your family’s favorite Freschetta Pizzas.
I make this fruit salad all of the time. As a matter of fact, I make a huge salad every Sunday so we can enjoy it with quick meals all week, especially when we have to be at a baseball game!
I store it in the refrigerator to eat as a snack and a healthy side dish and it’s always a staple for any brunches, birthday parties or cookouts we have.
The question I get every single time I make it… “Shannon, what do you do to your fruit salad that makes it so good?” I always say that the secret ingredient is love. 😉
The truth is, a great fruit salad always starts with great fruit!
Juicy watermelon, fresh pineapple, sweet strawberries and sometimes red grapes are always my base. After I’ve added my “base” ingredients to the bowl, I add whatever seasonal fresh fruit I have on hand that sounds good and always use my secret ingredient- orange zest!
It’s delicious and once you make it this way, you’ll never leave this simple little ingredient out! This week I added plump blueberries and mandarin oranges to the colorful mix too. Yum!
It’s sweetness blends all of the different fruits together, making this the perfect healthy side dish to pair with Freschetta Brick Oven Mushroom & Spinach Pizza (my favorite), Freschetta 4-Cheese Pizza, and Freschetta Pepperoni Pizza. I love that whole sweet and savory food pairing!
It’s such a delicious meal made really easy if you plan just a little bit ahead. Your family will look forward to pizza night each week and you can be happy because it’s all less than the cost of takeout!
I always grab a few different varieties of Freschetta Pizza when I’m grocery shopping at Walmart so it’s ready to go on those crazy nights quickly from freezer to oven.
Having a busy household and being short on time doesn’t mean you can’t feel good about what you’re serving your family for dinner. Freschetta is made with real high quality ingredients and features a tasty crust that rises naturally making your simple weeknight meal authentic and full of flavor bringing Real Taste to Real Life.
To make dinner cleanup easier on those rush around evenings we also like to eat outside. It’s nice to sit down and take a break, enjoy a little family time and fresh air while keeping the kitchen inside clean before we’re off to the ball game.
Do you have a really busy schedule?
