Until recently, I was unfamiliar with this amazing European Cookie Spread called Biscoff . Well, let me tell you, I am familiar with it now, and it is delicious! It’s a spread with a peanut butter like consistency and is made from the famous Biscoff cookies and comes in smooth or creamy. You can use this spread on toast, fruit, or just by itself on a spoon! I really love the idea of energy bites because they can be made ahead of time and are a great on the go snack. My family loved the Nutella Energy Bites I made a few months ago, so I decided to make something similar with a little different flavor. These Biscoff Energy Bites are just as tasty and are made with crunchy Biscoff spread, old fashioned oats, honey, flax seed, golden raisins, vanilla, cinnamon and chocolate chips. With back to school just around the corner, it’s nice to have a few snack recipes on hand. My children loved making this recipe with me in the kitchen and enjoyed eating a few bites too:)
Ingredients
- 1 1/2 cups old fashioned oats
- 1/2 cup golden raisins
- 1/2 cup crunchy Biscoff spread
- 1/4 cup ground flax seed
- 1/3 cup honey
- 1/3 cup semi sweet chocolate chips
- 1 tsp. vanilla
- 1/2 tsp. cinnamon
Instructions
- Combine all ingredients and mix well. (I like to mix this in my Kitchen Aid Mixer)
- Roll into balls.
- Serve or store in several individual small airtight containers in the refrigerator for up to 1 week.
