Well Hello there! Happy New Year! I hope your New Year is off to a great start! Things around Cozy Country Living and around my home got so busy last month that I took a well needed break from things last week. After a fun family game night on New Year’s Eve, my husband and I were fortunate enough to have my mother come over the next day and watch our children overnight so we could take a quick trip up to Niagara Falls. The weather was frigid and the winds were blustery, but we had such a nice time enjoying some great food, a cozy stay at a lovely historic inn, and of course the beautiful Falls. It was the first time we had ever been there in the Winter, and it was simply beautiful. You can check out a few pictures from our trip on Instagram. With that being said, our kiddos are back to school and we are back to our routine. Of course a warm breakfast is a must on a cold Winter morning and these Black Bean & Salsa Breakfast Burritos are a tasty option!
One of my New Year’s Resolutions this year is to be more organized…Everywhere! I had sort of gotten away from my meal planning, but now I am getting back on track. It’s a new year and a fresh start. These yummy Black Bean & Salsa Breakfast Burritos are really easy to make and they are freezer friendly too, so that helps me out with my freezer cooking and meal planning as well.
My family really likes the Breakfast Burritos I usually make, but I’ll admit that sometimes I don’t feel like chopping veggies, even if it’s just a little bit of them. You can totally skip the chopping with these burritos!
All you need to do for this simple recipe is beat your eggs with a little milk, salt & pepper, and start to scramble them. Add a can of well rinsed black beans and grated Sharp cheddar cheese to the mixture, stir until the eggs are set and the cheese is melted, then and set up a mini “burrito making station” to roll them up.
I warm my tortillas quickly in the microwave to make them soft and pliable for rolling, and then I grab a jar of my favorite chunky salsa (homemade or store bought is fine too) and I go to town. 🙂
The best part about these burritos is that you can serve some of them fresh, but you can also wrap up the left over burritos and store them in the freezer. They make a great warm & quick breakfast for your family on busy mornings!
Ingredients
- 4 Tbsp. butter
- 18 eggs
- 1/4 cup milk
- salt
- pepper
- 1 (15 oz.) can black beans, drained and rinsed well
- 2 cups grated Sharp Cheddar Cheese
- 1 (16 oz.) jar of your favorite Chunky Salsa or homemade
- 20 flour tortillas (medium size)
Instructions
- In a large mixing bowl, lightly beat together the eggs with a little salt & pepper and the milk.
- In a large non stick skillet, melt the butter over medium heat and then add the egg mixture.
- Stir the eggs frequently until they are almost scrambled (about 10 minutes).
- Turn the heat to low and add the black beans and cheese.
- Stir and continue cooking until the eggs are scrambled and the cheese is melted.
- Remove the pan from the burner and let the mixture cool a bit.
- Place your tortillas on a plate and warm in the microwave for 90 seconds.
- Make a little "burrito roll up station".
- Take one tortilla, place 1/4 - 1/3 cup of the filling in the middle of the tortilla, top with a tsp. or Tbsp. of salsa and then roll up firmly.
- Repeat for the remaining tortillas.
- Serve warm (you can place them on a baking sheet in a low oven if you wish) or let cool and freeze.
- To freeze, roll the cooled burrito in a paper towel and store them individually wrapped in a large freezer friendly plastic bag or container.
- To reheat, remove from the freezer, leave the burrito wrapped in the paper towel and heat on a microwave safe plate for 1-2 minutes. (Microwave times may vary)
- Makes 20 burritos.

These look good! we have breakfast burritos sometimes but never thinkk to add black beans, which I do use for dinner burritos. I’ll have to remember this next time. 🙂
