Have you been enjoying your Summer so far? We have! I am loving all of the fresh fruits it has to offer, especially blueberries. I like to use them in many different things. These delicious Blueberry Cobbler Oatmeal Cookies are one of them! Don’t worry- if you can’t find fresh blueberries, you can always use dried blueberries and your cookies will be just as yummy!
I love spending extra time with my children when they are out of school in the summer and I love that we live in an area that offers so many options for freshly grown fruits and vegetables. We have a pretty big garden here at home, but we also spend many afternoons at local farms and orchards picking our own fruit. We always have so much fun picking those big, juicy and ripe blueberries and they are wonderful for just plain old snacking, or baked in cobblers or pies.
Before we had a chance to go blueberry picking this year, I thought I would try packing some blueberry flavor into a tasty cookie using dried blueberries. That’s right. Dried Blueberries. While summer is full of all that fresh fruit goodness, sometimes you want a quick snack or dessert that doesn’t require a trip to the farm or local fruit stand if you don’t have the berries on hand.
These Blueberry Cobbler Oatmeal Cookies are slightly crisp on the outside, chewy on the inside and taste like summer’s best Blueberry Cobbler. Butter, old fashioned oats, brown sugar, cinnamon, nutmeg and of course the sweetened dried blueberries ( but you can use fresh of course:) ) make these cookies a real special treat. They smell amazing when they are baking in the oven and go well with a tall glass of milk.
My children were just getting home from school when these cookies were about ready to come out of the oven and they couldn’t wait to get their hands on them. As a mother, it always makes me feel good when the smell of something baking in the kitchen makes them feel at home and comforted, and it doesn’t matter what season it is.
These cookies really have become our new favorite at our house and I hope your family will enjoy them as well. I know summer is busy, but this quick recipe is nice to have on hand for just that reason. It takes only a few minutes to mix up the batter and about 10 minutes to bake. This recipe makes 3 1/2 dozen cookies, so you will be able to freeze a few for later too! Enjoy!
Ingredients
- 1/2 cup unsalted butter, softened
- 1/2 cup shortening
- 1 3/4 cups brown sugar, packed
- 1 egg
- 1/3 cup 2 % milk
- 2 tsp. vanilla extract
- 4 cups old fashioned oats
- 1 1/2 cups all purpose flour
- 1/2 cup whole wheat flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/8 tsp. nutmeg
- 1 (3.5 oz) bag dried blueberries (sweetened) or 1 cup fresh blueberries
Instructions
- Preheat your oven to 375 degrees.
- Line 2 baking sheets with parchment paper and set aside.
- In your Kitchen Aid Mixer, cream the butter, shortening and brown sugar until light and fluffy.
- Add the egg, milk and vanilla and mix well.
- Add the oats, and flours along with the soda, salt, cinnamon and nutmeg and mix until combined.
- Add the dried blueberries and mix until incorporated.
- Drop Tablespoonfuls of the cookie batter onto the lined baking sheets and bake for 10-12 minutes or until the cookies become light golden around the edges.
- Remove from the oven and let them rest 1 minutes before removing to a cooling rack.
- Makes about 3 1/2 dozen cookies.
- Serve warm or room temperature with milk.
- *To freeze: Let cookies cool completely and them store in a plastic freezer safe bag or container.

Good one Shannon!! We love oatmeal cookies and this one will be a winner in my home. I wonder how strawberries will taste…hmmm??! In case anyone is wondering, freezing cookie dough is the best idea! My DD loves to have a cookie dough day. She makes up about 3-4 varieties and flash freezes scooped balls on a cookie sheet. Everyone just pops whatever flavor they want in the oven or toaster oven for snacks and school lunches.

Thanks Joy! I should freeze cookie dough more often instead of baking them all at once and freezing them after. I’m sure is nice to grab the frozen dough and bake up some cookies on a whim and have the whole house smell so wonderful:) I’ll definitely have to try that with these!
