One of my favorite things about getting into a nice Back to School schedule and routine is dinner time. During the week things can get really busy, but at the end of the day it’s always nice to come together as a family. Sharing a meal together and talking about your day, no matter how good or bad it was is so important. Getting your children into the kitchen to help prepare and cook with you is just as important! Grab your kiddos, and apron or 2 and start simple with these delicious Breaded Chili Pork Chops with Brown Rice for dinner!
These pork chops are well seasoned, breaded and then baked for a moist and flavorful main entree. It’s served over tender brown rice along with a fresh steamed vegetable for a simple and satisfying weeknight family meal.
They are really easy to make and your children will have a great sense of accomplishment knowing that they helped to prepare such a tasty meal. Cooking is a great way to express yourself, a way to be creative and a learning experience that your children will carry with them the rest of their lives.
The older my four children get, the more I realize how important it is to spend individual time with each one of them. Making a date to cook at least once a week with your child is something that both of you can look forward to.

Blend together the seasonings and the breadcrumbs in a large plastic bag. This is always one of my kiddos favorite parts!
Brush each pork chop with extra virgin olive oil and then place it into the bag pressing each side down into the breadcrumb mixture, coating the meat well.
Place your breaded pork chops onto a lightly greased, foil or parchment paper lined baking sheet and bake until golden brown for 40-45 minutes in your oven.

Ingredients
- 6 bone-in (1 inch thick) pork chops
- 2 Tbsp. extra virgin olive oil
- 2 cups plain Panko breadcrumbs
- 1/4 cup chili powder
- 1 Tbsp. cumin
- 1 Tbsp. garlic powder
- 1 Tbsp. onion powder
- 1 1/2 tsp. salt
- 1 tsp. black pepper
- 3 (2 cup bags) of UNCLE BEN’S® Boil-In-Bag Whole Grain Brown Rice, prepared according to the package instructions
Instructions
- Preheat your oven to 350 degrees.
- Combine the breadcrumbs and all of the seasonings in a large plastic bag.
- Brush each pork chop with extra virgin olive oil and individually place each pork chop into the bag, pressing the breadcrumb mixture onto the meat to coat well.
- Place the breaded pork chops on a lightly greased, foil lined baking sheet and bake for 40-45 minutes until cooked through and they are nice and golden brown.
- Serve over whole grain brown rice along with freshly steamed vegetables.
- Serves 6.
