I really, really like pizza. I know it’s not always good for me, but I just can’t help it! I love the flavors and the possibilities are endless when you are making a pizza too. From your basic cheese & pepperoni to a roasted vegetable pizza- it’s always a big hit for dinner at our house. This week I put some yummy pizza flavors into a delicious and savory pot pie that makes for a great meal on a busy evening. This Cheesy Sausage & Pepperoni Pot Pie takes only a few minutes to prepare is wonderful served with a nice fresh salad for a tasty meal.
The best part about this recipe is that it’s flexible. You can choose which type of sausage you want whether it’s mild, hot sweet or even turkey sausage. Along with the pepperoni, you can also add in some peppers or mushrooms if your family likes them.
I think a good pot pie should be filled with all of your favorites. After all a pot pie is definitely a comfort food!
After browning your sausage in a large skillet, add your pepperoni, the spaghetti sauce and half of the shredded cheese, mix it all together, then let it cool for a few minutes.
*Preparing the filling can be done the night before too if you like! It’s always nice to save yourself a few minutes in the kitchen if you can!
Roll out 1 pie crust and lay it into a 9 inch pie plate.
Add half of the filling, then place tablespoon sized dollops of ricotta cheese on top, add your other cup of Mozzarella cheese and then layer that with the remaining sausage and pepperoni filling and add the remaining ricotta before placing the top crust on your pot pie.
Crimp the edges together with your fingers or a fork, brush with garlic butter, sprinkle with dried parsley and cut a slit or two into the top of the pie before placing in your hot oven to bake.
After the pot pie is bubbly and a nice light golden brown, remove it from the oven and let it rest for 5-10 minutes before serving.
We love how easy this meal is to put together and it gives us a “pizza fix” without having to wait for homemade dough to rise or having to order out.
If you’re a freezer cooking fan, you’ll be happy to hear that this yummy pot pie is freezer friendly! You can easily double the recipe to eat one for dinner and make one to store in the freezer for later! Enjoy!
Ingredients
- 1 package (2 crust) refrigerated pie crusts
- 1 lb. Italian sausage, browned (mild, hot, sweet or even turkey sausage)
- 1/4 lb. pepperoni
- sliced peppers and mushrooms (optional)
- 2 cups shredded Mozzarella cheese or Italian Four Cheese Blend, divided
- 8 oz. part skim ricotta cheese
- 1 (24 oz.) your favorite spaghetti sauce or homemade
- 1 1/2 Tbsp. butter, melted
- 1 tsp. garlic powder or garlic salt
- 1 tsp. dried parsley
Instructions
- Preheat your oven to 375 degrees.
- Brown your sausage (and soften veggies if desired) in a large skillet and drain any excess fat.
- Add the pepperoni, 1 cup of the shredded cheese, and spaghetti sauce. Mix well. Remove from heat and let it cool for a few minutes.
- Place 1 crust into the bottom of a 9 inch pie plate.
- Pour half of the sausage filling into your crust, drop tablespoon sized spoonfuls of 1/2 of the ricotta across the top, add the other 1 cup of Mozzarella cheese, and then layer with the remaining filling and then the remaining ricotta.
- Add the second pie crust to the top and crimp the edges together.
- Brush the pie with melted butter (mixed with garlic powder or garlic salt) and sprinkle the dried parsley on top.
- Make a few slits in the top of the pie and place in the oven on top of a baking sheet to bake.
- Bake for 35-45 minutes or until the pie is golden brown and bubbly.
- Remove from the oven and let sit for 5-10 minutes before serving.
- Serve this pot pie with a fresh salad for a delicious meal any night of the week.
- Serves 6.

- *To freeze- prepare as usual. Do not brush with butter or bake. Cover with plastic wrap or store in a plastic bag or freezer safe container. To prepare: Let the frozen pot pie thaw in the refrigerator overnight. Place on baking sheet, brush with butter, sprinkle on parsley and bake as usual. Depending on how many hours your pot pie defrosted, it may require a bit more baking time.
