I hope you all had a wonderful Easter with your families! I spent all day yesterday packing away the Easter eggs and sorting through the children’s baskets. Coming from large families, my children always come home with bags full of Easter toys and treats. With that out of the way today I am incorporating that leftover Easter ham into my menu. I made this yummy frittata for breakfast this morning and it was delicious! I am not a huge fan of leftovers unless they can be made into a different type of dish because I hate felling like I am eating the same thing over and over again. This recipe was so simple to make and I had all of the ingredients on hand. This is a filling, well balanced meal that can be served for breakfast, lunch or dinner. This Cheesy Spinach & Ham Frittata is also wonderful served with fresh bread and fruit.
Ingredients
- 2 Tbsp. Butter
- 1 Tbsp. Extra Virgin Olive Oil
- 1/2 bag frozen shredded potatoes
- 1 small onion, sliced very thin
- 8 eggs
- 1 (10 oz.) package frozen spinach, thawed and squeezed dry
- 1/2 tsp. salt
- 1/4 tsp. pepper
- splash of half & half
- 1 1/2 cups leftover ham, diced
- 1 cup Swiss Cheese, freshly grated
Instructions
- Pre heat the oven to 400° F.
- In a cast iron skillet heat the 2 tablespoons of butter and 1 Tbsp. Olive Oil over medium heat.
- Add the shredded potatoes and onion.
- Cook, tossing occasionally, until the potatoes are tender, about 10 minutes.
- Meanwhile in a large bowl, whisk together the eggs, ½ tsp. salt, ¼ tsp. pepper and the splash of half & half.
- Mix in the spinach, Swiss cheese, and the ham.
- Add the egg mixture to the skillet, stir once, and transfer the skillet to oven.
- Cook the frittata until the eggs are set, about 12 minutes.
- Serve hot from the oven with fresh bread and fruit.
- Serves 4 to 6.
