This week’s recipes are going to be pretty simple. My family had a garage sale this weekend and I am still trying to get back on schedule. Unfortunately, the laundry and house cleaning chores didn’t stop just because I had other things to do on Saturday, although that would have been nice wouldn’t it? Sometimes I need to remind myself that things don’t always need to be perfect and it’s okay to make a semi homemade dinner, or even order out once in a while. As mother’s I think we easily feel guilty if we don’t make the best meals, or have the most creative ideas with our children. This week I am not going to stress about how unorganized things may be because I was thrown off of my schedule, instead I am going to have fun with my children and slowly catch up. Good thing I have some quick, homemade desserts up my sleeve for those days when we are all craving a little something sweet!
I seem to be stuck on peanut butter and chocolate flavors lately, so I decided to make some chewy cookies that included those ingredients. I like simple peanut butter cookie recipes, but sometimes I am in the mood for something with a little more flavor- and chocolate! While a crisp peanut butter cookie is a nice treat, peanut butter and chocolate blended together always makes me happy and satisfies my sweet tooth. These Chewy Peanut Butter Chocolate Chip Oatmeal Cookies are great for dessert, a snack or even a nice treat for a family friend. These can also be frozen, which is nice because the children love these as an after school snack. I must admit that I have been known to even pair one these chewy cookies with my morning coffee for a sweet start to the day:) What’s your family’s favorite homemade cookie?
Ingredients
- 1/2 cup unsalted butter, softened
- 1/2 cup shortening
- 1/2 cup chunky peanut butter
- 1/2 cup creamy peanut butter
- 1 cup brown sugar, packed
- 1/2 cup white sugar
- 1 tsp. vanilla
- 2 eggs
- 1 3/4 cup all purpose flour
- 2 1/2 tsp. baking soda
- 1 tsp. salt
- 2 cups old fashioned oats
- 1 cup semi sweet chocolate chips
Instructions
- Preheat the oven to 350 degrees.
- In your Kitchen Aid mixer, beat the butter, shortening, and peanut butters until fluffy.
- Add the vanilla and eggs and beat until combined.
- Sift together the dry ingredients except for the old fashioned oats, and slowly add them to the mixture and stir together until just combined.
- Add the old fashioned oats and mix.
- Stir in the chocolate chips.
- Line your baking sheets with parchment paper.
- With a large spoon, take about 1/3 cup scoops, roll lightly into a ball with your hands and gently flatten between your hands, then place on the cookie sheets.
- Bake for 13 to 15 minutes or until edges are slightly browned, but still soft in the middle.
- Remove from the oven and let rest 3 minutes on the cookie sheet.
- Gently remove with a spatula to a cooling rack to cool completely.
- Makes about 20 large cookies.
- * To freeze, cool completely and store in an airtight container.
