Summer is always a great time to get together with family and friends and just enjoy each other’s company. Cookouts are easy, fun and are relaxing way to spend time together enjoying a meal on the weekends. Sometimes however, the weather doesn’t cooperate. Pop up thunderstorms can put a damper on your get together plans, but don’t let that stop you from entertaining!
This simple Chicken Romano in Wine Sauce is a delicious dinner entree that you can serve for a nice Sunday dinner or even a casual get together. This moist and flavorful chicken is made in one skillet for easy clean up, takes only 30 minutes to make, including cooking time and is perfect served with all of your favorite fresh summer fruits and vegetables. The wine sauce only adds to the flavor and is sure to please your family and guests. I just love CK Mondavi Chardonnay in this dish. Their Chardonnay is medium-bodied with a hint of oak. Aromas of lemon and citrus combined with flavors of apple and pear lead to a delightfully crisp finish. It’s a very refreshing wine on its own, but this Chardonnay is wonderful with roasted chicken, seafood, hearty cheeses and pastas with cream sauce.

Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup all purpose flour
- 1 tsp. fine sea salt
- 1 tsp. garlic powder
- 1/2 tsp. paprika
- 1/2 tsp. black pepper
- 1 Tbsp. butter
- 1 Tbsp. olive oil
- 1/2 cup chicken broth
- 1/2 cup CK Mondavi Chardonnay
- 1/2 cup freshly grated Romano cheese
- freshly chopped parsley for garnish
Instructions
- Preheat your oven to 350 degrees.
- In a large plastic bag, combine the flour, salt, garlic powder, paprika, and pepper.
- Add the chicken breasts and toss to coat.
- In a large cast iron skillet, melt the butter with the olive oil on medium heat.
- Brown the chicken for a few minutes on both sides.
- Turn the heat to low and add the chicken broth, the the wine.
- Bring to a low boil, and then turn off the heat.
- Cover the skillet with foil and then place in the oven to bake for 20-25 minutes or until the chicken is cooked through.
- Remove from the oven and top the chicken breasts with the Romano cheese and chopped parsley.
- Serve warm with remaining wine sauce, fresh vegetables or a salad and a glass of CK Mondavi wine.
- Serves 4.

Looks delicious! Wanted to try this tonight… Do you leave the chicken in after its browned? Or take it out for the sauce

Thanks Mandee! I just leave the chicken in the pan, the sauce isn’t thick or anything, but it adds so much moisture to the chicken. I hope you like it:)
