Every now and then I feel like a good, warm sandwich. I’m talking about the kind of sandwich that is comforting and can be eaten for dinner. When I was at the store the other day, I came across this Smoked Apple Hardwood Gruyere Cheese. Of course I bought it because it sounded wonderful! Last night I was in a sandwich mood, and I wanted to use that delicious cheese, so I decided to make these yummy Chicken Spinach & Apple Gruyere Sandwiches for dinner. Wow, these turned out to be sooo good! Every bite taken into the toasted Ciabatta roll was filled with creamy, melted Gruyere cheese, freshly sliced apple, baby spinach and warm, grilled chicken. This is an excellent weeknight meal, that’s sure to be a hit. Some of the ingredients can even be made ahead of time for easier preparation. The chicken can be grilled (I grill mine on my George Foreman Grill), and the cheese can be sliced and stored in the refrigerator until you are ready to assemble the sandwiches. I find that even the smallest things I can do ahead of time really seem to help me out on a busy evening. If you have a pretty hungry crowd at home, these sandwiches also go great with a hot bowl of homemade soup. What’s your favorite type of warm sandwich?
Ingredients
- 6 Ciabatta rolls
- 6 small boneless, skinless, chicken breasts
- 2 apples
- 1-2 cups organic baby spinach
- 8 oz. smoked Apple Hardwood Gruyere Cheese ( I like to slice the block in half and then make the slices for the sandwiches from there)
- butter
Instructions
- Preheat the oven to 375 degrees.
- Season the chicken breast with salt & pepper and grill until cooked.
- Butter the inside of the Ciabatta rolls.
- Place on the rolls, a layer of cheese, 1 chicken breast, 2 slices of apple, spinach and then another slice of cheese.
- Wrap the sandwiches tightly with aluminum foil and place on a baking sheet.
- Warm for 15- 20 minutes in the oven, or until cheese is melted.
- Cut in half and serve warm.
- Serves 6.
