This time of year can get pretty crazy. Sometimes it can be downright overwhelming. It’s important to take a step back though and live in the moment. Take a few hours on a weekend morning and really enjoy your family. Push that to do list to the side and start the morning with some family time and these delicious (and easy) Dark Chocolate & Peppermint Holiday Pancakes!
My kiddos love pancakes! It doesn’t matter what the occasion, they are always up for a hot stack in the morning! Since the holidays are upon us, I thought it would be fun to plan a special “pancake breakfast” at our house. To help make this breakfast even more special, I enlisted the help of my children to help set the table and Aunt Jemima to help out with the recipe!
Aunt Jemima Original Pancake Mix is the perfect thing to have on hand to whip up a tasty family breakfast. I grabbed a few boxes on my last grocery shopping trip to Walmart to have on hand for the busy upcoming holiday season.
I love that this mix helps me quickly make delicious, light and fluffy, simple pancakes for special breakfast.
If we want to get creative we can add in some of our favorite, fruits, nuts or chocolates, like we did with this recipe! For years, Aunt Jemima has helped busy families enjoy great tasting pancakes for breakfasts and brunches.
For this recipe, I prepared Aunt Jemima’s Original Pancake Mix according to the package instructions, then stirred in special dark chocolate cocoa, semi sweet chocolate chips and peppermint baking chips. This time of year I always have those extra holiday ingredients on hand, so there was no last minute trips to the store to get this yummy breakfast started.
After everything was combined well, I cooked these on a hot griddle. Oh… the chocolate and the peppermint together smelled so delicious as these fluffed up and cooked!
After all of your pancakes are cooked, top them with whipped cream, crushed candy canes and garnish with a mini candy cane on the side for a nice touch!
I like to let everyone put on their own toppings even if it does get a little messy! It’s always more fun that way. Don’t forget about the syrup though! Aunt Jemima Syrup drizzled on top of these makes them even more wonderful!
My children just loved these! Not only were they delicious, but the whole family can participate in preparing them from start to finish too. By the way- these are freezer friendly too! You can make a huge batch and pull them out and reheat them in the microwave for a morning when you are short on time!
It’s the simple things like this that make the best memories during the holidays! Don’t they look festive?!

Ingredients
- For the Pancakes:
- 2 cups Aunt Jemima Original Pancake Mix
- 2 eggs
- 2 Tbsp. canola oil
- water
- 1/4 cup Special Dark Cocoa
- 1/4 cup sugar
- 1/4 cup dark or semi sweet chocolate chips
- 1/4 cup peppermint baking chips
- For Garnish:
- whipped cream
- crushed candy cane
- mini candy canes
- maple or chocolate syrup
Instructions
- In a large mixing bowl, combine the pancake ingredients until incorporated well, but do not overmix. The batter should remain slightly lumpy. Pour the batter into a large liquid measuring cup for easy cooking.
- Preheat your griddle to 375 degrees.
- Lightly spray your griddle with butter or nonstick cooking spray.
- Pour the batter onto the griddle and cook .
- Serve the pancakes warm with whipped cream , crushed candy cane and syrup if desired.
- Makes 9 large pancakes.
- * To freeze- Let pancakes cool completely and then store separated with wax or parchment paper in between them in a freezer friendly plastic bag or container. To reheat, place on a plate and warm in the microwave.
