What would Valentine’s Day be without Chocolate & Strawberries? They are main ingredients in so many decadent and special desserts for Valentine’s Day and who doesn’t love sweet, ripe berries and flavorful rich chocolate? Because Valentine’s Day isn’t just about my husband and I anymore, we always try to make the day special for our whole family, including our 4 children. These Chocolate & Pistachio Covered Strawberries are a delicious & easy to make treat that you can share with your family this year to celebrate love!
I remember making homemade Valentine’s as a child. Cutting hearts out of good old construction paper, attaching a paper doily to the middle and addressing the hearts to every friend in my class with markers or crayons. These days, I find that homemade Valentine’s have kind of gone by the wayside. With so many different varieties of Valentine’s available at the store, it just tends to be more convenient for busy families to just pick up a box. The thing I don’t like about that is that most of the thought put into the Valentine’s is gone along with that convenience.
My children and I are planning a little Valentine making party here today after school. I’m going to make some hot chocolate and we’ll be getting out paper, markers, crayons and sparkly stickers to make cards. Nothing really fancy, but it’s always fun having a little craft time together. I can’t wait to hear about their Valentine’s Day parties they had at school when they come home on Friday and I love looking at the Valentine’s they received. Of course a special treat is in order while we are sharing the Valentine’s. These strawberries!
You are not going to believe how easy these Chocolate & Pistachio Covered Strawberries are to make! Sure it’s convenient to grab this tasty dessert already put together from the grocery store, but this year, give it a try and make these yourself. You won’t be sorry!
The best chocolate covered strawberries start with the best berries. That’s why I always use Driscoll’s Strawberries for this recipe. Their berries are always ripe, juicy and sweet. If you can find Driscoll’s Organic Strawberries at your local grocery store- even better!
To make these, I set up a little station on my kitchen table with a parchment lined baking sheet, rinsed and dried strawberries, melted chocolate and finely chopped pistachios. Then I simply dipped half of the strawberry into the chocolate (I like a nice thick coating-yum) and then while holding the top of the berry, I gently roll the side of the chocolate covered strawberry into the pistachios. The strawberry then gets placed onto the parchment paper and you are on to the next one.
I think this batch took me about 5 minutes! That’s it! Then I placed the strawberries in the refrigerator so the chocolate would harden nicely.
My children were just thrilled to have these for dessert because they seem so fancy to them. We are making another batch on Valentine’s Day because these ones are gone! Share this yummy recipe with the one’s you love this Valentine’s Day!
Ingredients
- 1 lb. package of Driscoll's Organic Strawberries, rinsed and dried
- 1 cup semi sweet or dark chocolate chips
- 1/2 - 3/4 cup dry roasted, peeled pistachios, chopped finely (I use my small food processor)
Instructions
- Under very low heat, melt the chocolate chips in a small saucepan, continually stirring with a spoon being careful not to burn.
- Set up a little prep station on your counter or table with the strawberries, the parchment lined baking sheet, the melted chocolate and the finely chopped pistachios.
- Dip the strawberries into the chocolate, the gently roll part of the chocolate in the pistachios and set the finished strawberries on the parchment paper.
- Place the baking sheet with the strawberries in the refrigerator to let the chocolate harden, at least an hour.
- Enjoy!
