I hope everyone had a wonderful Easter with their families! I’ve got all of our Easter decor, baskets and plastic eggs put away in the attic and that really makes me feel like I have accomplished something!
On Easter I let my children eat the chocolate or candy that they want (to a point) and then the rest gets stored in individual bags with their names on them so they can pick a piece out here an there for special treats later on in the month. I don’t allow it to be a week long free for all with the candy, so after a recent trip to the grocery store, I have replenished our refrigerator with colorful fresh fruits and vegetables that will be perfect for meals and snacks this week. I will admit that sometimes a fresh piece of fruit for dessert just won’t cut it when I have a craving for something sweeter at night, so today I made this simple but delicious Cream Cheese Fruit Dip to go along with some of the fruit I bought! Fresh orange zest, a splash of juice, heavy whipping cream, and confectioner’s sugar are blended together for a yummy dip that can satisfy your sweet tooth without going over board as long as you don’t completely cover your fruit in it!
This fabulous dip tastes great on animal or graham crackers too! It’s perfect for a last minute dessert on the weekends or even made for a family picnic or brunch. Because my children are still home from school on Spring Break, they thought that this was really special when I called them into the kitchen for snack time and had this pretty platter waiting for them on a regular ordinary day! Ingredients
- 1 (8 oz.) package cream cheese, softened
- 3/4 cup confectioner's sugar
- zest from 1 orange
- 1 1/2 Tbsp. orange juice
- 2 Tbsp. heavy whipping cream
Instructions
- Combine all ingredients in a medium sized glass mixing bowl.
- With a handheld mixer, whip the ingredients together for a few minutes until well blended.
- Serve immediately or store covered in the refrigerator until ready to serve chilled with your favorite sliced fresh fruits.
- Enjoy!
- Makes about 1 1/2 cups of dip.
