I love meals that are quick and easy during the week. From the time my children step off of the school bus until the time they go to bed, it’s really busy around here. Even though it’s busy, it’s important to me that we sit down together for dinner each night. Now that my children are getting older, they are able to help with the little things like setting the table and can even help me with the preparation of the meals as well. This simple Creamy Chicken & Spinach Alfredo Pasta is a delicious, family friendly meal that the whole family will enjoy!
This pasta meal combines a tasty homemade, quick and easy alfredo sauce, fun bow tie pasta, tender rotisserie chicken and chopped spinach. It’s then then topped with freshly grated Parmesan cheese for a wonderful dinner that can be on your table in 30 minutes! This pasta meal is also great served with a fresh salad, crusty bread and even a glass of wine for the adults. Want to make it meat free? Just omit the chicken! It’s still just as delicious with the creamy alfredo sauce, pasta & spinach!
Every time I go to the grocery store, I grab a rotisserie chicken. Having one (or two) in my refrigerator during the week can be really convenient for salads, sandwiches, or quick pasta or casserole meals like this one. I usually take all of the meat off of the chicken as soon as I get home from the store so it’s ready to go when I need it. I often keep the bones too, so I can make a comforting soup during the week if it’s chilly out or if someone has the sniffles.
I find that if I plan my meals for the week ahead of time, things seem to go smoothly in the evening. If you’ve got a busy household like me and are longing for more of a routine, give meal planning a try and don’t forget to put this yummy meal on you to do list!
Ingredients
- 1 lb. farfalle pasta, cooked al dente and drained
- 1/2 cup unsalted butter
- 1 1/4 cup half and half
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/2 tsp. to 1 tsp. garlic powder
- 2 1/2 cups freshly grated Parmesan cheese (must be freshly grated, not the stuff from the can)
- 2-3 cups chopped, cooked chicken (I use a rotisserie chicken)
- 1 (10 oz.) package frozen chopped spinach, thawed and squeezed dry
- 1/2 cup freshly grated Parmesan cheese to top the pasta
Instructions
- Preheat your oven to 350 degrees.
- Cook and drain your pasta and return it to the stock pot.
- Meanwhile in a medium saucepan, melt the butter over low heat and add the salt, pepper, and garlic powder.
- When the butter has just melted, slowly add the half and half, stir well and bring to a low boil.
- Turn off the heat and add the 2 1/2 cups of Parmesan and mix until melted and saucy.
- Add the chicken, spinach and alfredo sauce to the pasta and give it a good stir until everything is well combined.
- Place the pasta mixture into a casserole dish, top with remaining 1/2 cup of cheese, cover and Bake for 20-25 minutes to heat through.
- Serve hot immediately with a fresh salad and crusty bread.
- Serves 4-6.
