I love Pistachios! But they are even better when they are in a chocolate cookie with white chocolate chips! I wanted to make cookies earlier this week, but my children were off from school and well, it just didn’t happen. Last night after they went to bed I decided that there was no better time. The house was quiet and I had the kitchen all to myself. I turned on some music and baked. It was so relaxing and after my little baking session my husband and I enjoyed some warm cookies fresh from the oven. What a perfect evening right? If you are in search of a different cookie recipe- give these yummy cookies a try!
Ingredients
- 1 cup unsalted butter, at room temperature
- 1 cup light brown sugar, packed
- 1 cup granulated sugar
- 2 teaspoons vanilla extract
- 2 eggs
- 2/3 cup good unsweetened cocoa
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 12 oz. bag white chocolate chips
- 1 cup pistachios, coarsely chopped
Instructions
- Preheat the oven to 350 degrees F.
- Cream the butter and both sugars until light and fluffy in a Kitchen Aid mixer.
- Add the vanilla, then the eggs, 1 at a time, and mix well.
- Add the cocoa and mix again.
- Sift together the flour, baking soda, and salt and add to the chocolate with the mixer on low speed until just combined.
- Fold in the chopped white chocolate.
- Then fold in the pistachios.
- Drop the dough with a large spoon on a baking sheet lined with parchment paper.
- Dampen your hands and flatten the dough slightly.
- Bake for exactly 15 minutes (the cookies will seem underdone).
- Remove from the oven and let cool slightly on the pan, then transfer to a wire rack to cool completely.
