One of my family’s favorite things to do in the Spring is pick asparagus! There’s a farm about 10 minutes away from my house that you can go and pick as much asparagus as you want. You can bring your own bag or they have buckets that you can fill. My children all just love to grab a bucket and be on their way picking. You pay by the pound and it is cheaper than buying it at the grocery store, not to mention it just doesn’t get any fresher than this:) It’s wonderful!
Today I am sharing with you a simple recipe that is perfect for breakfast, lunch or dinner. This Egg and Asparagus bake is made with freshly picked asparagus, Swiss and Provolone Cheeses and blended with a hint of garlic. This would be great served at a brunch with fresh fruit and pastries too. What is your family’s favorite asparagus recipe? Ingredients
- 1/2 lb. fresh asparagus
- 2 cloves garlic, minced fine
- 8 eggs, beaten
- 1/4 cup half & half
- 1/2 cup Swiss cheese, shredded
- 1/2 cup Provolone cheese, shredded
- 1/2 tsp. sea salt
- 1/4 tsp. pepper
- 1 Tbsp. olive oil
- 2 Tbsp. butter
Instructions
- Pre heat the oven to 350 degrees.
- Blanch the asparagus in boiling water for 2 minutes.
- Remove to an ice water bath and then drain and pat dry with paper towels and chop into 3 inch pieces.
- Set aside.
- In a medium sized mixing bowl combine the eggs, half & half, salt, pepper, cheeses and garlic and mix well.
- In a cast iron skillet on medium/ high heat, heat the olive oil and butter and saute the garlic for 30 seconds.
- Add the asparagus and give it a good stir.
- Pour the egg mixture into the skillet and give everything a good, slow stir.
- Put the skillet into the oven and bake for 20 minutes or until the eggs are set in the center.
- Serve warm with fresh fruit.
- Enjoy!
