Usually by the beginning of September I am ready to start putting those cozy, inviting Fall touches all around our home. I’m almost always ready to start baking with lots of cinnamon, apples and pumpkin. I’m just not there yet this year! Why? It’s been 85 degrees out all week and even though my children are back to school, I am just still enjoying summer. I couldn’t pass up an 8 qt. basket of these fresh & juicy Red Haven Peaches at the Farmer’s Stand this week either. I figured I better get peachy while I still can! After making homemade peach pies and eating these for every snack and every meal I could, I decided to use a few in these yummy Fresh Peach Crumble Bars. They’re a perfect addition to your Labor Day picnic or get-together menu!
These yummy bars are for all of you fellow crumble lovers out there! There just may be a little more crumble in this recipe than filling!
Delicious sun ripened peaches are sliced, mixed with a little cinnamon & sugar, then thickened over the stove before making it’s way in between a buttery oat crumble.
These bars are the perfect end of summer treat and they bake beautifully in the oven until the top is light golden brown and delicious. A scoop of vanilla ice cream is always really yummy over these bars too!
These bars don’t last very long at our house, but if you happen to have any left over or want to make 2 batches, this dessert is freezer friendly. It’s always nice to enjoy a homemade fresh peachy dessert in the Fall of even Winter with a hot cup of coffee or tea.
I think these bars are an excellent way to share a homemade peach recipe with your family and friends. The weather is still nice, so if you are having a cookout, these bars make a really tasty dessert!
Because the filling is softer I usually serve these on a plate, but they can also be eaten with your hands if you like! 😉

Ingredients
- For The Filling:
- 5 cups fresh peaches, peeled and sliced
- 1/2 cup sugar
- 1/2 tsp. cinnamon
- 1/3 cup all purpose flour
- For the Crust:
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1 cup all purpose flour
- 2 cups old fashioned oats + 1/2 cup old fashioned oats (for the other half of crust/topping)
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
Instructions
- In a medium saucepan, combine the peach filling ingredients, mash a bit with a potato masher to make the peach filling into a more chunky consistency and cook on medium/low while mixing constantly until it is thick and bubbly about 10 minutes. Careful not to burn.
- Turn off heat, and set aside to cool to room temperature. I sometimes cheat & put it in the refrigerator. 😉
- Pre heat the oven to 375 degrees.
- In your Kitchen Aid Mixer, cream the butter and the sugar.
- Mix in the 1 cup of flour and the 1/2 tsp. salt and cinnamon, then stir in the 2 cups of oats.
- In a 9 x 13 baking dish, press 1/2 of this oat mixture into the bottom of the dish evenly with a fork and/or spoon.
- Pour the cooled peach filling mixture on top of the crust and spread evenly.
- Add the other 1/2 cup oats to the remaining oat mixture.
- Mix until crumbly.
- Gently break up and sprinkle the crumbles on top of the peach filling evenly.
- Very gently press down on top the peach filling.
- Bake for 30-35 minutes or until golden brown on top.
- Cool to room temperature, then chill in the refrigerator until ready to cut and serve. You may serve this warm, room temperature or cold. It's up to you! Delicious either way!
- Serves 8-12.
- * If freezing, bake as usual, cool completely, cover and freeze.
