Sometimes the day just gets away from me. I get busy working in my garden or doing chores around the house and then suddenly it’s dinner time, and I have nothing prepared. That happened to me this weekend. On Sunday, I spent the morning harvesting vegetables out of the garden and most of the afternoon catching up on laundry and paperwork. Before I knew it, it was 7 o’clock, and even though my kitchen counters were full of fresh tomatoes, zucchini, lettuce, cucumbers and herbs- I had nothing prepared for dinner! With fall just around the corner, and a slight chill in the evening air, I thought some Fresh Tomato Basil Soup would be a quick, delicious dinner. This soup is really easy to make and can be ready to eat in about 20 minutes. It’s perfect for those nights when you are running low on time and it’s wonderful served with a fresh salad and crusty bread. My family loves to eat this soup topped with fresh croutons and a generous amount of Parmesan or Romano cheese. What are your favorite “garden” soups?
Ingredients
- 1 lb. fresh San Marzano tomatoes, crushed (about 3 cups)
- 32 oz. container of Chicken Broth
- 1 large garlic clove, smashed
- 1/2 tsp. sea salt
- 1/4 tsp black pepper
- 1/2 cup heavy cream
- 1/4 cup 2 % milk
- 1/2 cup fresh basil, chopped
- Croutons, Parmesan & Romano cheeses for garnish
Instructions
- Combine the tomatoes and chicken stock in a medium sized saucepan on medium heat and bring to a boil.
- Once the soup starts to bubble, immediately turn the heat down to low and add the smashed clove of garlic, the sea salt, black pepper, heavy cream and milk.
- Give it a good stir and let simmer for 15 minutes, stirring occasionally and watching so it doesn't burn.
- Use an immersion blender to puree the soup well.
- Serve hot with a generous amount of freshly chopped basil, croutons and cheese.
- Serves 4-6.

I love all the fresh tomatoes right now! I do not have a garden, but I am fortunate my mom is willing to share! This soup is wonderful! Perfect for when the weather starts to turn cold!

Thanks Tanya! I have made this with good quality canned tomatoes and it is still very good. I just can’t resist the fresh tomatoes this time of year:)
