I hope everyone had a wonderful Thanksgiving! I decided to “unplug” from the internet and social media over the Thanksgiving holiday and this past weekend to spend some well needed time with the most important people in my life. My family. We got cozy by the fire and enjoyed hot cocoa together while we watched some really nice Christmas Specials (My favorite was The Hallmark Hall of Fame Movie “Christmas In Conway“- make sure you have a box of tissues handy) on TV. We got the Christmas decorations down from the attic and started to decorate our home too. With all of the coziness going on at our house, I decided I needed to make a warm, festive breakfast for my family. I love anything gingerbread, so these delicious Gingerbread Pancakes were a sweet way for me to start the month of December.
The smell of gingerbread filled my kitchen as these pancakes cooked on the hot griddle and put me into the holiday spirit. These pancakes have just the right amount of molasses and spices to give your family that wonderful, all natural gingerbread flavor, without overpowering the delicious, simple taste of homemade buttermilk pancakes. These are best served hot with real maple syrup and go very well with breakfast sausage and eggs for a filling weekend brunch. If you love gingerbread and are looking for something special to serve your family this season while you are decking the halls, give these Gingerbread Pancakes a try! My children loved these so much that they have been requested for breakfast Christmas morning. I love these pancakes so much that I will be making them for weekend breakfasts all year round;)
Ingredients
- 2 cups all purpose flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/4 cup brown sugar
- 2 eggs, lightly beaten
- 1/4 cup unsalted butter, melted and cooled
- 2 1/2 cups buttermilk
- 2 Tbsp. molasses
- 1 tsp. cinnamon
- 1/2 tsp. ground ginger
- 1/8 tsp. ground cloves
Instructions
- Combine all ingredients until just combined.
- Do not over mix.
- Pour desired amounts of batter onto a preheated griddle (about 375 degrees) and flip the pancakes over when they start to bubble and are cooked around the edges.
- The pancakes are ready when they are light golden brown.
- Serve hot with real maple syrup.
- Serves 6 - the amount of pancakes you will get depends on the size pancakes your family likes to make:) Enjoy!
