Do you have the Winter Blues? This snowy and cold Winter weather is just something we deal with in our area and right now there seems to be no end in sight. Being stuck indoors can sometimes make you feel down and frustrated. I like to cheer myself up this time of year with simple things, like Florida Grapefruit! Florida Grapefruit is at its sweetest and juiciest right at the peak of winter (January-March), making it a great source of delicious, ripe fruit at a time when many others are not available. Florida’s unique fertile soil and lush subtropical climate are what make Florida Grapefruit the sweetest and juiciest variety of grapefruit in the world, but they can also take a toll on the outer appearance of the fruit – don’t judge a book by it’s cover! Adding delicious, juicy, and ripe Florida Grapefruit to your diet this Winter is sure to put a smile on your face. Yesterday I surprised my kiddos with these yummy and simple Grapefruit & Vanilla Yogurt Popsicles!
I really enjoy eating grapefruit for breakfast with toast some mornings to help me start the day. I don’t like to add anything to it, I just slice the grapefruit, grab my grapefruit spoon and enjoy. Florida Grapefruit are nice and sweet so I don’t feel the need to add any extra sugar. My children also love to eat grapefruit as a snack this way, but I wanted to be a little creative this week with their snack preparation.
These Grapefruit & Vanilla Yogurt Popsicles are definitely a fun way for your little ones and your whole family to get more Vitamin C into their diet! One-half of a Florida grapefruit contains at least 100 percent of the recommended daily amount of vitamin C, which can help support a healthy immune system which is great during cold and flu season.
Whipping these popsicles up only takes a few minutes. Take your blender out and add a 1/2 cup of your favorite Vanilla Yogurt. Then slice a Florida Grapefruit in half and using a grapefruit spoon, cut the pieces of grapefruit out and add them to the blender. Remove the seeds from the grapefruit and squeeze the remaining juice into the blender as well. You may add a touch of sugar or a splash of orange juice to taste if you wish, but I like mine just like this. Put the lid on your blender and blend! Then pour the liquid into your favorite popsicle molds and freeze. That’s it!
If you love grapefruit, you are really going to enjoy this creamy, tasty, icy treat. These popsicles are full of juicy bits of grapefruit pulp and can also be very soothing when you have a sore throat or a cold this time of year too!
If it’s just way too chilly for you to really enjoy popsicles right now, there are plenty of other yummy ways to enjoy your Florida Grapefruit this Winter. You can sprinkle a little brown sugar over a sliced grapefruit and broil it for dessert, add a whole Florida Grapefruit to any of your breakfast smoothies, or even peel a grapefruit and add the segments to a grilled chicken and spinach salad for lunch. With so many great options, make sure to brighten up these last few months of Winter with yummy Florida Grapefruit!
Ingredients
- 1 large Florida Grapefruit, halved and sections removed + Juice from the grapefruit
- 1/2 cup your favorite Vanilla Yogurt (I've used Greek before too)
- 1 tsp. sugar or a splash of orange juice (optional & to taste)
Instructions
- In your blender combine the grapefruit, grapefruit juice and the yogurt.
- Pour into your favorite popsicle molds and freeze at least 6 hours.
- Quickly run the popsicle under warm water and remove from form.
- Enjoy!
- Makes 4 popsicles.
