Ahh, pineapple and coconut. Those tropical flavors can bring me right to the beach; just as long as I close my eyes and forget that I am wearing 3 layers of clothing because it’s snowing outside! That’s right. I’m not in Hawaii, and I’m not at the beach, I have just been doing a little day dreaming lately. We are still dealing with negative wind chills and blustery temperatures here, so I decided to take my mind elsewhere when I was baking this pound cake the other night. With Spring right around the corner (hopefully), I thought I would make something with a tropical flavor to brighten everyone’s mood. This Hawaiian Pineapple & Coconut Pound Cake did just that. It made everyone in my family smile. Sometimes when the weather is so cold for so long and there doesn’t seem like there’s an end in sight, you begin to feel unhappy and that’s no fun!
About 20 minutes into baking this delightful cake, the whole house smelled absolutely wonderful. The warm, buttery pineapple and coconut aroma had everyone making their way into the kitchen to see what was going on. We were all counting down the minutes for the timer to go off and for the cake to be done! I let it cool only a little before slicing into it, because I just love a fresh warm cake and the pineapple and coconut flavors were really amazing in this right out of the oven. A spoonful of fresh whipped cream on top of this warm cake made it an extra special treat! We ended up having a few slices left over from dessert that night, but my children were more than happy to finish the rest in the morning for breakfast with some fruit. This pound cake is very simple to prepare and would be an excellent addition to your brunch or dessert table this Spring!
Ingredients
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 6 eggs
- 2 1/4 cups all purpose flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. ground ginger
- 1 cup crushed pineapple, drained but not squeezed dry
- 1 cup flaked coconut
Instructions
- Preheat your oven to 350 degrees.
- Grease 1 large or 2 medium sized loaf pans. (You can also line them with parchment paper and spray with a little cooking spray for easy removal from pans)
- Set aside.
- In your Kitchen Aid Mixer, cream the butter and sugar together until fluffy.
- Add the eggs, one at a time, beating well after each addition.
- Add the remaining ingredients and mix until combined well, but do not over mix.
- Pour the batter into your prepared pan(s).
- Bake for 55-65 minutes (check on it, ovens vary and you may need a few minutes longer on 1 large loaf) or until a toothpick inserted into the cake comes out clean.
- Cool for at least 30 to 35 minutes before removing the cake from the pan to cool completely (or you may want to eat it a little warm-yum!) on a cooling rack.
- Slice and serve with fresh whipped cream, fruit or even ice cream.
- You can always warm this up on a plate in the microwave for a few seconds before serving too.
- Store any left over cake in an airtight container or even freeze for later.
- Enjoy!
- Make 1 large or 2 medium sized pound cakes.

Medium vs small loaf pan size in inches please. I have several. Just want to make sure our thinking is same.

Hi Judy! My “medium” loaf pans are 8″ x 4″ x 2 1/2″ and should make 2 loaves with this recipe and the “large” one I use is 9 1/4″ x 5 1/4″ x 2 1/2″ for 1 large loaf- but you have to carefully watch the edges or you can line the loaf pan with parchment paper if you want. I hope this helps:)

Was so excited =) The desserts I usually make are chocolate. This is one of my non-chocolate desserts and I am so happy he had that reaction! We loved it.
I used crushed pineapple 🙂 And since I have a really small loaf pan (for just the two of us) I used 3 eggs.

Is the coconut sweetened or unsweetened? Ditto on the pineapple?

Hi Joe! I used a regular can of crushed pineapple- I believe it comes in 100% pineapple juice, and I used sweetened coconut, but unsweetened would work as well.
