Good Morning! I hope you are staying nice and warm wherever you are. February started off with another foot of snow here in Western New York, and although it can be pretty, the frigid temperatures and sub zero wind chills have made it difficult to bundle up and take even a short walk around our property. The sunshine was just beautiful this morning as I glanced out at the shimmering blanket of snow outside my door, but it’s very deceiving. That sun is not really warming anything up! I decided to warm up my kitchen instead with these freshly baked Homemade Chocolate Chip Muffins.
I haven’t spent too much time in the kitchen lately because I was getting over Strep Throat and I just didn’t feel like it. My children love to have muffins for breakfast or an afternoon snack, so I thought these would be a nice surprise, now that I am feeling better. Muffins are probably my favorite thing to bake. They are so easy to whip up and most recipes I use make a few dozen. I usually leave 1 dozen out to eat and freeze the other dozen for later. With Valentine’s Day right around the corner, I admit, I have had chocolate on my mind. I usually add chocolate to muffins with fruit or in cookies with nuts, but today….it’s just all chocolate! 😉
A generous amount of semi sweet chocolate chips are folded into a thick, sweetened buttermilk batter sprinkled with a hint of cinnamon and topped with raw sugar to give you a deliciously moist chocolate chip muffin that you can make right at home.
Snowed in? No problem! Make the best of it. Whip up a few dozen of these yummy muffins for your family and have a cozy breakfast together.
If you love chocolate and a sweet treat occasionally in the mornings with your coffee or tea, then you are definitely going to want to put these tasty muffins on your to do list!
Ingredients
- 1/2 cup unsalted butter, softened
- 1/2 cup unsweetened applesauce
- 2 cups sugar
- 4 eggs
- 1 tsp. vanilla
- 4 cups all purpose flour
- 2 1/2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1/2 tsp. cinnamon
- 1 cup buttermilk
- 1 (12 oz.) package semi sweet chocolate chips
- 2 Tbsp. raw sugar for topping
Instructions
- Preheat your oven to 375 degrees.
- In your Kitchen Aid Mixer, cream the butter, applesauce and sugar until smooth.
- Add the eggs one at a time, combining after each addition.
- Sift the dry ingredients.
- Alternate adding the dry ingredients with the buttermilk, combining after each addition.
- Do not over mix the batter or your muffins will be tough.
- Fold in the chocolate chips.
- Fill the paper lined muffin tins 3/4 full with the batter and then sprinkle the tops of the muffins with raw sugar.
- Bake for 18- 20 minutes or until the muffins are light golden brown on top.
- Do not over bake.
- Remove from the oven and cool a bit.
- Best served warm.
- Makes 2 dozen muffins.
- *To freeze, cool completely and then store in a freezer friendly container or plastic bag.
