If you are looking for a healthy, no additive marinade then this recipe is for you. This homemade marinade is made from basic fresh ingredients you probably have in your house right now. I love marinated chicken & steamed vegetables for a simple week night dinner. The lemon and garlic give chicken a light and fresh flavor that doesn’t come from chemicals or additives. If your outdoor grill is put away for the season, this marinade is wonderful on chicken cooked on a George Foreman Grill or a Grill Pan on your stove.
Ingredients
- 4 cloves garlic, roughly chopped
- 1/4 cup extra virgin olive oil
- juice from 1 small lemon- about 3 Tbsp.
- 1/2 tsp. seasoned salt
- 1/8 tsp. freshly ground black pepper
- 1 Tbsp. fresh parsley, chopped
Instructions
- Combine all ingredients.
- Whisk together.
- Place 2-3 chicken breasts in a freezer sized plastic bag.
- Add marinade and move it around so that the chicken is well coated.
- Let the chicken marinade at least 4 hours.
- Grill chicken until cooked, and discard left over marinade.
