When strawberries are in season, the first thing I want to do is make Strawberry Shortcake! I will admit that when it comes to the shortcake part, I don’t like to waste the calories unless it is homemade. I am also not a big fan of the oily prepackaged cakes they sell at the store either. I guess it is fair to say that I am a bit of a shortcake snob.
I want to serve my family something that tastes amazing and something that they can’t wait to eat because they can smell it baking in the oven. I think people are under the impression that making these from scratch takes too long or that they just may not turn out right.
This Homemade Shortcake recipe takes only minutes to prepare and they rise up beautifully to give you a buttery crust that is light and fluffy on the inside. So skip that package at the store, and serve your strawberries and whipped cream on top of these great shortcakes, warm and fresh from your own oven! Don’t stop with the strawberries though. These shortcakes taste great with any fresh berries and are wonderful with fresh peaches and whipped cream:)
Ingredients
- 2 cups flour
- 4 1/2 tsp. baking powder
- 3/4 tsp. salt
- 1/4 cup sugar
- 2 Tbsp.cold unsalted butter, cut into tiny pieces
- 2 Tbsp. shortening
- 3/4 - 1 cup half and half
- Melted butter to brush shortcakes
Instructions
- Preheat the oven to 375 degrees.
- In your Kitchen Aid mixer, combine the flour, baking powder, salt and sugar.
- Mix in the butter and the shortening.
- Mix in the half and half until a thick, lumpy dough forms.
- Drop 6 to 9 large sized spoonfuls onto a baking sheet.
- I like to use spoonfuls to keep these rustic looking and not perfect.
- Brush the shortcakes with melted butter and sprinkle with sugar.
- Bake for 15 minutes or until light golden brown on top. *Watch your oven- oven times may vary.
- Cool slightly and serve with berries and fresh whipped cream.
- Serves 6-9, depending on the size you make them.
- Enjoy!

I was thinking the same thing! I’ve actually never made shortcake without the strawberries. But these look great for when strawberries are in season, yum!
