These waffles are just perfect! They are crisp on the outside and fluffy on the inside. I use a pretty inexpensive Belgian Waffle Maker and get about 6 huge waffles out of this recipe. If you have a smaller waffle maker you will be able to get many more. These also freeze wonderfully. If I have the waffle maker out, I always figure why not double the batch and make some for later. You family will be glad you did!
Ingredients
- 2 cups Flour
- 1 3/4 cups Milk
- 1/2 cup Canola Oil
- 2 Eggs, beaten
- 1 Tbsp. Sugar
- 4 tsp. Baking Powder
- 1/4 tsp. Salt
- 1 tsp. Pure Vanilla Extract
- 1/2 tsp. Cinnamon
Instructions
- Preheat your waffle iron.
- Beat the eggs in a large mixing bowl with a whisk or electric hand mixer until fluffy.
- Add all of the other ingredients until just smooth. Do not over mix.
- Lightly spray your waffle iron with non stick cooking spray if desired.
- Pour mix onto the hot waffle iron and cook until light golden brown.
- Serve hot with toppings such as maple syrup, flavored syrup, whipped cream, fruit or nuts.
Once your batter is ready, make sure your waffle iron is hot. You want to get that nice crisp on the outside of the waffle.
Ladle batter into waffle iron, but leave a little space so it can expand when you close it.
