This week my children were home for Spring Break and really wanted to whip up something fun in the kitchen by themselves. We decided on these simple no bake cookies, and boy were they good! With chocolate, peanut butter and mini M&M’s, you really can’t go wrong. I did help with the quick stove top step, but the rest of the “baking” was up to them. They had so much fun and were very proud of themselves. If your children are anxious to get into the kitchen, try this yummy recipe this weekend with them. You will not be disappointed!
Ingredients
- 1/2 cup unsalted butter
- 1/2 cup milk
- 1 cup sugar
- 1 tsp. vanilla extract
- 4 Tbsp. cocoa powder
- 1/2 cup peanut butter
- 3 1/2 cups oatmeal
- 1 cup mini M&M's
Instructions
- Prepare 2 cookie sheets with wax or parchment paper, and set aside.
- In a large saucepan over medium heat, combine the butter, milk, vanilla,sugar and cocoa powder.
- Whisk together and bring to a boil.
- Keep whisking and let it boil for 1 minute. ( If you skip this, you will have a grainy texture from the sugar)
- Remove from the burner, and set aside.
- Add the peanut butter and the oatmeal to the warm melted mixture and stir well.
- Gently stir in the M&M's.
- Drop spoonfuls onto the wax or parchment paper (we used an ice cream scoop and lightly flattened them with our fingers to make more of a cookie shape) and place in the refrigerator to cool and set for 20 to 30 minutes before serving.
- Store in a container in the refrigerator for up to 1 week.

These look delicious! I would like to bake this for the fourth of July weekend but have two questions. How many cookies does it yield and can I use whole milk, 1%…etc?

Can you use light brown sugar instead of white or will it mess up the outcome?

I love no bake cookies but we called them un-baked. This would be a great idea to use up some of the leftover Easter M&M’s I have and also to make for the bake sale I need to bake for hubby this weekend. Thanks for sharing on Foodie Friends Friday and I hope you join us again next week.
