Breakfasts at our house usually consist of oatmeal, cereal, eggs, fruit or muffins. I feel like I provide a pretty good variety of breakfast meals throughout the week, but sometimes my children get bored and want a little something different to eat. Breakfast Bars are perfect for mornings when my children are running a little late getting ready for school because they are having a tough time getting out of their warm, snuggly beds. It’s something that they can grab and eat quickly with a glass of milk. These No Bake Honey Almond Breakfast Bars are very simple to make, can be prepared ahead of time and are a satisfying breakfast that will keep your children full until lunch time. Honey Nut Cheerios are blended together with old fashioned oats, almonds, golden raisins, cranberries, flax seed, almond butter and honey for a nutritious breakfast bar that you can feel good about. These bars make an excellent snack too. Bring them to school, work or even on a family road trip. If you haven’t tried making your own breakfast bars before, give it a try. You’ll be surprised at how easy it is and how much fun your family will have coming up their own favorite varieties of flavorful breakfast bars!
Ingredients
- 2 1/2 cups Honey Nut Cheerios
- 2 cups old fashioned oats
- 1/2 cup sliced almonds
- 2/3 cup dried cranberries
- 2/3 cup golden raisins
- 2 Tbsp. ground flax seed
- 1 tsp. ground cinnamon
- 1/2 cup almond butter
- 1/2 cup honey
- 1 tsp. vanilla extract
- 1/4 tsp. salt
- 1/3 cup brown sugar, packed
Instructions
- Spray a glass 9 x 13 baking dish well with non stick cooking spray and set aside.
- In a large mixing bowl, combine the Cheerios, oats, almonds, raisins, cranberries, flax seed, and cinnamon.
- Mix together.
- In a medium saucepan whisk together the almond butter, honey, brown sugar and vanilla on low heat until it is well combined and starts to bubble.
- Continue stirring for 3 minutes being careful not to burn the "syrup".
- Pour the mixture over the dry ingredients and mix well until everything is coated.
- Pour the mixture into your baking dish and with the back of a measuring cup sprayed with cooking spray, even out the mixture, pack and flatten it until it looks even.
- Cover the baking dish and place the breakfast bars in the refrigerator for 45 minutes to chill and harden a bit.
- Cut into 16 squares, serve room temperature or store in individual plastic baggies.
- You can store these in the refrigerator or at room temperature (we store in the refrigerator and then pack them as a snack for school and they warm up by snack time 🙂 ) for up to 1 week.
