Sometimes a little chocolate goes a long way! This weekend it was way too cold to venture outdoors and my children were looking for something fun to do. When wind chills are below zero I do not let them play outside, no matter how bundled up they are, so we had to make the best of the day being snowed in. While my children kept themselves busy creating interesting things with their LEGOS, I decided to bake a few dozen of these tasty Nutella Chocolate Chunk Cookies! These crisp on the outside and slightly chewy on the inside cookies are a wonderful blend of Nutella and semi sweet chocolate chunks. They are simple to make and are a wonderful surprise with a cup of hot chocolate on a cold, snowy day! One by one, my children all managed to mosey on into the kitchen as the first batch of these were coming out of the oven and offered to test them out for the blog. How sweet! 🙂 After cooling off a few minutes, my ever so willing children got to “test out” and enjoy these freshly baked cookies. Chocolate covered smiles and laughter filled my home on Saturday afternoon and it was so nice spend a quiet, cozy day inside with my loves. If you have Nutella lovers at home, bake a few dozen of these cookies and create your own memories the next time you and your family are snowed in!
Ingredients
- 1/2 cup unsalted butter, softened
- 1/2 cup shortening
- 1 cup Nutella
- 1 1/2 cups sugar
- 2 eggs
- 1 tsp. vanilla
- 3 1/2 cups all purpose flour
- 2 tsp. soda
- 1/2 tsp. baking powder
- 1 tsp. salt
- 1 (12 oz.) package Nestle Toll House semi sweet Chocolate Chunks
Instructions
- Preheat the oven to 375 degrees.
- In your Kitchen Aid mixer, beat the butter, shortening, Nutella and sugar until fluffy.
- Add the vanilla and eggs and beat until combined.
- Sift together the dry ingredients and slowly add them to the mixture and stir together until just combined.
- Stir in the semi sweet Chocolate Chunks.
- Line your baking sheets with parchment paper.
- With a spoon or cookie scoop, drop dough by rounded Tablespoonfuls about 2 inches apart.
- Bake for 8-10 minutes (9 minutes was perfect for me but all ovens are different) or until edges are slightly browned, but still soft in the middle.
- Remove from the oven and let rest a minute on the cookie sheet.
- Gently remove with a spatula to a cooling rack to cool completely.
- You can eat these warm while the chocolate is still melted too 🙂
- Makes about 4 dozen cookies.
- * To freeze, cool completely and store in an airtight container.
