Does your family ever feel like Thanksgiving Dinner, but not on Thanksgiving? Maybe you love the smell and taste of that delicious turkey and stuffing baking in the oven, but you only have to cook for 2. I love cooking Thanksgiving Dinner, but I only do it once a year, and that’s it! There is no other meal throughout the year that I spend all day cooking for other than Thanksgiving. I knew there had to be a simpler way to enjoy all of those tasty, comforting foods that we love during the Holidays, other times during the year. Maybe even during the work week! Today I am sharing this simple 30 minute, savory One Pot Turkey & Stuffing Casserole that you and your family are going to love !
In a Dutch Oven, you start out by sauteing a little onion, finely chopped celery, diced sweet potato and apple in butter until just softened. You then add chopped fresh turkey meat, a little parsley and some chicken broth to the pot, cover it and bring it a low boil for a few minutes. Add a package of herb cubed stuffing, chopped walnuts, dried cranberries, and a little salt and pepper. Give everything a good stir, then cover it and bake the casserole in the oven for 30 minutes. It’s that easy!
Only a half and hour later, the result is a perfectly moist stuffing complete with those buttery, crunchy pieces around the edges mixed with tender, savory turkey with a subtle hint of sweetness from the apples and cranberries and a creaminess from the sweet potatoes. Every bite of this casserole is just bursting with flavor! Add some steamed vegetables and a simple homemade cranberry sauce to your plate and you’ll have a comforting Thanksgiving like meal on your table in 30 minutes.
With the cold and snowy weather we have all Winter, I love having a satisfying meal ready for my family when they come in from the cold. The bonus is, is that serving this meal gives you the feeling of Thanksgiving all over again, and that’s a good thing right? 🙂
Ingredients
- 1/2 cup salted butter
- 1 large onion, chopped
- 2 stalks of celery, finely chopped
- 1 large baking apple, chopped
- 1 sweet potato, peeled and diced small
- 2 1/2 cups chicken stock
- 1 lb. fresh, boneless skinless turkey, cut into bite sized pieces (I used breast, but you can use dark meat too)
- 1 Tbsp. dried parsley
- 1 (14 oz.) bag Herb Cubed Stuffing (not prepared)
- 1/2 cup walnuts, roughly chopped
- 1/4 cup dried cranberries
- salt
- pepper
Instructions
- Preheat your oven to 350 degrees.
- In a Dutch Oven on medium-low heat, melt the butter and saute the onion, celery, sweet potato, and apple until just softened.
- Add the turkey, parsley and the chicken broth and stir.
- Cover and bring to a low boil, about 2 minutes.
- Add the dry herb stuffing, the walnuts, cranberries and a little salt and pepper.
- Stir well.
- Cover and bake in the oven for 30 minutes.
- Remove from the oven and serve warm with gravy, steamed vegetables and cranberry sauce.
- Serves 6-8.
