These scones have a wonderful flavor and are a great addition to a weekend brunch. Perfect on a cold morning with a cup of hot coffee or tea. If you have any left over these also freeze beautifully.
Orange Cranberry Scones
Ingredients
- 2 cups flour
- 5 1/2 Tbsp. butter, cold
- 1/3 cup orange juice
- 1/4 cup heavy cream
- 1 egg
- 1 Tbsp. orange zest
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 6 oz. bag dried cranberries
- 7 tsp. sugar
- For The Glaze
- 1/2 cup confectioners sugar
- 1/2 tsp. pure vanilla extract
- 1 Tbsp. orange juice
Instructions
- Pre heat oven to 400 degrees.
- In a large bowl or mixer, stir together flour, sugar, baking powder, baking soda, salt and orange zest.
- Cut cold butter into squares and mix or use a pastry blender until the mix looks like coarse crumbs.
- In a smaller bowl, combine the cranberries,orange juice, egg and heavy cream.
- Add that mixture to the flour mixture and mix until blended together.
- Do not over mix.
- On a well floured surface, gently knead the dough 8 times.
- Roll the dough into a 1 inch thickness and about a 8 inch circle.
- Cut into 8 pieces.
- Separate the wedges and place on a parchment lined or silicone lined cookie sheet.
- Brush with milk and sprinkle with sugar.
- Bake for 12 minutes or until lightly browned.
- Remove from cookie sheet to a cooling rack and cool completely.
- Whisk glaze together in a small bowl and pour into a small plastic bag.
- Snip the end of the bag and drizzle the glaze over the scones.
