I have been baking and sharing a lot of breakfast food this month with you all because September is Better Breakfast Month! It has always been very important to me to make sure my children eat a nutritious breakfast every single day. I believe that breakfast IS the most important meal of the day and making time for breakfast and choosing to incorporate ingredients like peanut butter which is high in fiber, protein and good fats can play a role in maintaining your diet.
These soft, thick and chewy Peanut Butter & Banana Breakfast Squares are a tasty breakfast that the whole family will love. These on-the-go breakfast squares are full of peanut butter, bananas, and old fashioned oats that will keep you full until it’s time for lunch. That’s always important to me. I would hate to have my children come home from school and say, “Mom, I was so hungry today.” I love adding peanut butter to many of the breakfast items I bake regularly because peanut butter is a natural, plant-based source of eight grams of protein and more than 30 essential nutrients and phytonutrients. Peanut butter is also a very budget-friendly ingredient for your morning meals. On average, peanut butter costs 16 cents per ounce, which is enough peanut butter to make one sandwich!
If I am serving these bars warm, right out of the oven, I usually bake them with a few fresh slices of banana on top. They kind of melt into the bar and just add a sweet gooey topping to these. If I am baking them to freeze ahead of time, I simply skip that step!

Since I love peanut butter, I wanted to share some of my favorite Peanut Butter Fun Facts!
- It takes about 540 peanuts to make a 12-ounce jar of peanut butter

- The average child will eat 1,500 peanut butter and jelly sandwiches before he/she graduates high school

Ingredients
- 1/2 cup creamy peanut butter
- 2 ripe bananas, mashed
- 1/2 cup brown sugar
- 1 egg
- 1 tsp. vanilla
- 1 cup whole wheat flour
- 1/4 cup whole ground flax seed meal
- 1 3/4 cups old fashioned oats
- 1 1/2 tsp. cinnamon
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. salt
- Optional:
- Top with a few sliced bananas to bake if desired
Instructions
- Preheat your oven to 375 degrees.
- Mix all ingredients together in your Kitchen Aid Mixer until combined well.
- Spray a 9 x 13 glass baking dish with non stick cooking spray and evenly spread the batter into the dish.
- This batter is very thick and sticky, and I found a plastic spoon worked best.
- Add a few fresh banana slices if you will be serving this right away.
- Bake for 15 minutes.
- Remove from the oven and cut into squares.
- Serve warm or at room temperature.
- Makes 12 squares.
- * To freeze, cool completely and store in a freezer friendly plastic bag or container.
