Sometimes a simple pasta meal with a glass of wine in the middle of the week is just what I need! This Pipe Rigate Pasta with Vegetable Ragu is a delicious week night meal that doesn’t take long to prepare. The Vegetable Ragu can simmer on the stove while you help the children with their homework and unwind from the day. Cook the pasta, top with ragu, fresh parsley and Parmesan cheese, pour yourself a glass of wine and enjoy the rest of your evening. This meal is also great for a date night in. Wait for the children to go to bed, have a late dinner with your love and enjoy a movie together! You can also serve this pasta with a fresh salad and crusty bread for a perfectly satisfying vegetarian meal. I don’t think you will even miss the meat! Enjoy!
Ingredients
- 1 (16 oz.) package Pipe Rigate pasta
- 1 (28 oz.) can crushed tomatoes
- 1 (15 oz.) can Italian Style diced tomatoes
- 2 large carrots, sliced thin
- 1 stalk of celery, chopped
- 1 small onion, finely chopped
- 3 large cloves of garlic, minced
- 2 bay leaves
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 2 Tbsp. olive oil
- fresh parsley
- Parmesan cheese
Instructions
- In a large saucepan, heat your olive oil over medium heat and add the carrots and celery.
- Saute for 5 minutes, stirring then add the onion, and garlic until fragrant.
- Add the crushed tomatoes, diced tomatoes, salt, pepper and bay leaves.
- Bring to a slow boil for 5-10 minutes, stirring occasionally.
- Turn the heat to low and simmer for 45 minutes.
- Cook the pasta according to the package directions and drain.
- Return the pasta to the pan and pour a 1/3 of the vegetable ragu on top and stir to coat well.
- Evenly distribute pasta into bowls, top with more ragu, fresh parsley and Parmesan cheese.
- Serve warm with tossed salad and crusty bread.
- Serves 6.
