Today is National Pancake Day! Celebrate by having Breakfast for Dinner tonight! These pancakes are made with whole wheat flour and oatmeal so you don’t have to feel as guilty eating them. If you have any left over, these can be frozen and then reheated in the microwave.
Pumpkin Oatmeal Pancakes
Ingredients
- 1 1/2 cups milk
- 1 cup oats
- 3/4 cup pumpkin puree
- 1 egg
- 1/2 cup whole wheat flour
- 1 Tbsp. baking powder
- 1 tsp. sugar
- 1 tsp. cinnamon
- 1 tsp. vanilla
Instructions
- Combine milk and oats in a blender.
- Blend until smooth.
- Add the pumpkin puree, flour,egg, baking powder, sugar, cinnamon,and vanilla.
- Blend until combined well and let sit 5 minutes.
- On a hot griddle, cook pancakes until they bubble and then flip over to finish cooking.
- Serve topped with maple syrup.
- Serves 4-6 depending on the size of your pancakes.
