Would you like some pumpkin pie for breakfast? Well, this isn’t exactly pie, but it tastes just as good! My family loves oatmeal, and with my children going back to school this week, I wanted to make sure they had a filling breakfast every morning. This warm Pumpkin Pie Baked Oatmeal is one of our family’s favorites and is comforting on a cool fall morning. It has all of the delicious, warm spices and flavors of pumpkin pie, is blended into old fashioned oatmeal, baked and served right from the oven for an amazing fall breakfast. You can also add some chopped pecans or walnuts if you like a little crunch. My daughter thought that some fresh whipped cream would be a perfect addition to this oatmeal. I suppose it wouldn’t hurt. After all, people top their hot, caffeinated morning drinks with whipped cream, so why not on top of oatmeal? With cooler weather right on our doorstep, warm your family and your home with the wonderful flavors and aromas of Pumpkin Pie!
Ingredients
- 3 cups old fashioned oats
- 1 (15 oz.) can 100% pure pumpkin
- 3/4 cup brown sugar
- 1 cup milk
- 2 eggs, lightly beaten
- 1/4 cup butter, melted and cooled
- 1 tsp. cinnamon
- 1/2 tsp. ginger
- 1/4 tsp. nutmeg
- 1/4 tsp. cloves
- 2 tsp. baking powder
- 1 tsp. pure vanilla extract
- 1 tsp. salt
Instructions
- Preheat the oven to 350 degrees.
- In a large bowl, mix together all of the ingredients.
- Spread into a 8 x 8 inch baking dish or deep dish pie plate.
- Bake for 30 minutes or until the center looks set.
- Serve warm with chopped nuts.
- Serves 6.
- *If you are freezing this- prepare as usual and freeze unbaked. When you are ready to use the frozen oatmeal, defrost in the refrigerator overnight and bake as usual!
