Good Morning and Happy Friday everyone! Our area is experiencing nice, crisp Fall like weather and I am loving it! It really makes me feel like baking warm, cozy and delicious things for my family. The past few evenings, I have been snuggling up with my favorite blanket sitting near the open windows enjoying the cool breezes- along with some quiet after the children have gone to bed. Soon it will be time for the first fire of the season in our fireplace too! I hope you all don’t think I am crazy (like my husband does, because this isn’t his favorite time of year) but I am really the happiest person when Fall comes around! How about you? Do you love Fall?
To start this chilly Fall morning off right, I decided to bake some yummy Pumpkin Spice Oatmeal Muffins! These muffins are actually more along the lines of a “healthier” muffin, but they taste so delicious you would never know it! Yummy pumpkin is mixed with old fashioned oats, whole wheat flour, brown sugar, applesauce, warm spices like cinnamon, nutmeg, ginger, and clove, then topped with more oats for a nice crunch when you bite into these moist little breakfast treats.
You don’t even need to get out the mixer for this one guys… Just a good old mixing bowl and a wooden spoon will do! I always feel like I am really going the distance when I don’t use the mixer! 😉 If you have little helpers at home, I am sure they would love to help you sprinkle some of those old fashioned oats on top!
I like to serve these for breakfast on a school days because they will keep my little guys full until lunchtime. If you don’t have time to make these in the morning, go ahead and bake them up in the afternoon! What better way for your children to end the school week than with these warm muffins right from the oven after school?! Pssst… these are freezer friendly too, so you really can make them at a time that is convenient for you!

Ingredients
- For the Muffins:
- 1 cup whole wheat flour
- 1 cup all purpose flour
- 1 cup old fashioned oats
- 1 cup sugar
- 1/2 cup brown sugar, packed
- 3/4 cup canola oil
- 3/4 cup applesauce
- 4 eggs
- 2 tsp. baking soda
- 2 tsp. baking powder
- 1 tsp. salt
- 1 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/4 tsp. ginger
- 1/8 tsp. cloves
- 1 (15 oz.) can pure pumpkin
- For the Topping:
- 1/2 cup old fashioned oats
Instructions
- Preheat the oven to 375 degrees.
- In a large mixing bowl, combine the ingredients until well incorporated.
- With an ice cream scoop, evenly distribute the muffin batter into lined muffin tins.
- Sprinkle the batter with the remaining old fashioned oats.
- Bake for 18-20 minutes or until light golden around the edges and a tooth pick inserted into the muffins comes out clean.
- Cool in the tins for a few minutes before removing to a cooling rack.
- May be served warm or room temperature.
- Makes 18 to 20 muffins.
- *To freeze- Let cool completely and then store in a freezer friendly plastic bag or container.
