Because it’s officially Fall, I cannot seem to get Pumpkin out of my head! It’s everywhere too. My Home Feed on Pinterest is full of gorgeous, delicious pictures of savory and sweet pumpkin recipes from the many talented bloggers I follow. Pumpkin is really one of those foods that should be used more often all year round, but it is really considered a Fall food. I know that pumpkin is harvested in the Fall, but when I am cooking or baking with it, I am almost always using 100% Pumpkin Puree out of a can. It’s my favorite canned food and we use it a lot, especially when someone at our house is craving these Pumpkin Spice & White Chocolate Oatmeal Cookies!
These yummy cookies are really easy to prepare and make your whole house smell like Fall when they are baking! Old fashioned oats are blended with pumpkin, brown sugar, warm spices and of course those sweet white chocolate chips to give you an Autumn cookie that is sure to please. These cookies are crisp on the outside and perfectly chewy on the inside. I like to make these in the afternoon right before my children get off of the bus for a special treat. Who doesn’t love a homemade cookie after a long day at school?!
The cookie dough can just be scooped onto parchment paper and baked that way, giving it a more rustic appearance, or you can roll the dough into a ball and flatten it with your hands (a bit messy, but that’s okay 🙂 ) to create a more uniform appearance. Either way, they taste delicious when they are still a bit warm, or at room temperature when the white chocolate chips have had a chance to harden again inside the cookies.
If you are like me and cannot resist the temptation of grabbing a cookie here and there throughout the day, you will be happy to know that these are freezer friendly! You can leave out a few for dessert and then freeze the rest for later, leaving no temptation on the counter! If you love Pumpkin & Oatmeal, be sure to give these cookies a try!
Ingredients
- 1/4 cup unsalted butter, softened
- 1/4 cup shortening
- 1 1/2 cups brown sugar
- 1/2 cup pumpkin puree
- 1 egg
- 4 cups Old fashioned oats
- 1 1/2 cups all purpose flour
- 1/2 cup whole wheat flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/3 cup 2% milk
- 1 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/4 tsp. ginger
- 1/8 tsp. cloves
- 1 1/2 cups white chocolate chips
Instructions
- Preheat your oven to 375 degrees.
- In your Kitchen Aid Mixer, beat the butter, shortening and sugar together until light and fluffy.
- Add the pumpkin and the egg and combine.
- Add the oats and flours, soda, salt, the spices and then milk.
- Mix until just combined.
- Add the white chocolate chips and stir.
- Take heaping 1/4 cup sized spoonfuls and place them on a parchment paper lined cookie sheet.
- If you like your cookies to look more uniform, you can roll them into a ball in your hand and then flatten them a bit to get that shape. They will not spread out during baking, so if you want that flat look, you must do this.
- Bake for 12-14 minutes or until light golden brown around the edges.
- Remove from the oven and let them sit for 2 minutes before moving them to a cooling rack.
- Serve warm or room temperature.
- Makes about 3 dozen cookies.
- *To Freeze, let the cookies cool completely and then store in a freezer friendly container or plastic bag.

Holy cow, Shannon, these could possibly be the best looking cookies I’ve ever seen! Since I was a kid, the only kind of cookie I would eat is plain oatmeal. You have changed all that, lol. The flavours and ingredients in these truly have my mouth watering! I never thought of pumpkin and chocolate but I can so taste it!
