I love the smell of fresh lemon, don’t you? We’re going to add this to the sugar before sprinkling it on top of the peaches before roasting.
After halving, pitting and arranging your fresh peaches in a baking dish, let your children help sprinkle the lemon sugar on top, then roast them in the oven for 30 minutes.
This makes your whole house smell wonderful too! For this recipe, you’ll also get to make your own honeycomb. Have you ever made honeycomb before? It’s really easy, and oh so good!
Simply bring your honey, sugar and water to a boil, then cook the mixture for 5 minutes over medium-high heat until a candy thermometer reaches 305 degrees. Remove from the heat, whisk in baking soda, then pour the hot mixture onto a lightly greased baking sheet and let cool. You can then break your honeycomb into pieces. This part can also be prepared ahead of time and stored in an airtight container for up to 3 days.
When it’s time to assemble your sundaes, make sure you drizzle a little of the flavorful pretty pink peach juice into each bowl.
Your little kitchen helpers will be more than willing to help you scoop Breyers Natural Vanilla Ice Cream on top. Those warm peaches and it’s juices along with creamy ice cream, garnished with honeycomb make for a beautiful summertime dessert. Happy Birthday Breyers!
Ingredients
- 1 cup sugar, divided
- 1 lemon, zested
- 4 ripe but firm white peaches, halved, pitted
- Nonstick cooking spray
- 1/3 cup honey
- 1 1/2 tsp. baking soda
- 4 cups Breyers® Natural Vanilla Ice Cream
Instructions
- Preheat oven to 425°F.
- In a small bowl, whisk 3 Tbsp. of the sugar and lemon zest for about 1 minute, or until sugar is fragrant and moist.
- Arrange peaches, cut side up, in a 13x9-inch baking dish. Pour 2/3 cup water into dish.
- Sprinkle lemon sugar mixture over peaches and roast for 25 to 30 minutes, or until peaches are slightly softened and have released their juices.
- Meanwhile, lightly spray a small baking sheet with nonstick spray.
- In a medium heavy saucepan over high heat, bring remaining sugar, honey, and 2 Tbsp. of water to a boil, stirring constantly.
- Reduce heat to medium-high and cook, without stirring, for about 5 minutes, or until a candy thermometer reaches 305°F.
- Remove from heat and whisk in baking soda just until blended and mixture begins to bubble. Gently pour hot mixture onto prepared baking sheet and cool.
- Break honeycomb into small pieces and reserve in an airtight container.
- Spoon 1/2 cup Breyers® Natural Vanilla Ice Cream into each of 8 bowls.
- Top with warm roasted peaches and warm juices.
- Sprinkle with honeycomb pieces and serve immediately.
- Enjoy!
