I love soup when it is snowy and cold, however, it is very easy to get into a one soup routine. Usually in my house this is because someone is sick and nothing helps soothe a bad cold better than Homemade Chicken Noodle Soup. Don’t get me wrong- I love Homemade Chicken Noodle Soup, but sometimes I want to go a little above and beyond with a different type of soup recipe. This Rustic Italian Wedding Soup requires a bit more time because you are making the meatballs, but the time is well worth it. Serve this soup topped with freshly grated Parmesan and it is sure to warm you even on the coldest of evenings.
Ingredients
- For The Meatballs:
- 1 lb. ground beef
- 1 small onion, grated
- 1/4 cup fresh parsley, finely chopped
- 1 large egg, beaten
- 2 cloves garlic, peeled and grated
- ½ cup Italian bread crumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup grated Romano cheese
- 1 teaspoon salt
- ½ teaspoon black pepper
- For The Soup:
- 12 cups Homemade chicken broth( you can use store bought if you don't have any)
- 1/2 Tablespoon dried oregano
- 3 large carrots, sliced
- 5 oz package organic fresh baby spinach, ends broken off
- 1 1/4 cups dried orzo pasta
- 1/2 teaspoon salt to taste
- 1/4 teaspoon pepper to taste
Instructions
- In a large mixing bowl combine the meatball ingredients and mix.
- Shape the meat mixture into 1 - 1 1/2 inch meatballs.
- In a cast iron pan, heat a few Tablespoons of olive oil and fry meatballs in batches, careful not to crowed them.
- Brown meatballs on both sides then remove them to a paper towel lined plate.
- They may still be a little pink on the inside but that's okay because they will finish cooking in the soup.
- In a large pot over medium heat bring the chicken broth to a boil.
- Add the carrots, spinach, the oregano, salt and black pepper to taste.
- Reduce the heat to low-medium and add the meatballs.
- Cook the meatballs and carrots until the carrots are softened about 20-30 minutes.
- In a medium sized saucepan, cook pasta and drain.
- Add the pasta to the soup.
- This tastes wonderful topped with freshly grated Parmesan cheese and served with Crusty Fresh Bread.
