Eating a bowl of oatmeal in the morning is a wonderful way to start the day. It is packed with fiber and protein that will keep you full until lunch time. The weather forecast for our area the next few days is rain, rain, and more rain. Along with the rain, we are going to have cooler temperatures so I thought this warm Banana Chocolate Oatmeal would be nice this morning. It was delicious! The steel cut oats, with their chewy texture, combined with the chocolate and banana make for a filling breakfast. I like to slice fresh bananas and sprinkle mini chocolate chips on top of the oatmeal for an extra special treat. You can’t go wrong with this simple recipe and who doesn’t love chocolate in the morning?
Ingredients
- 1 1/4 cups steel cut oats
- 2 1/2 cups almond milk
- 2 1/2 cups water
- 1/4 cup unsweetened cocoa
- 1/3 cup sugar
- 1 large ripe banana, mashed
- 1/4 cup mini chocolate chips
- 1/2 tsp. vanilla
- pinch of salt
- 1 Tbsp. butter
- non stick cooking spray
Instructions
- Spray and butter the inside of your slow cooker.
- In the slow cooker, combine all of the ingredients and stir well.
- Cover and cook on low for 6-8 hours depending on your slow cooker.
- Uncover and stir well.
- Leave the cover off and let the oats thicken.
- Serve warm topped with fresh banana and extra mini chocolate chips.
- Makes 6 large servings.
