Mmmm…a taste of this warm berry cobbler will have you thinking about summer. But don’t worry, you don’t have to wait for berry season to make this delicious dessert. Get out your slow cooker along with those frozen berries in your freezer and treat your family to this sweet treat tonight. This recipe is so simple and it is from scratch- no box mixes here. This takes only 2 1/2 hours to cook in the slow cooker and serves 6. Don’t forget to top this with vanilla ice cream or whipped cream! Enjoy!
Ingredients
- 1-1/4 cups all purpose flour, divided
- 2 Tbsp. plus 1 cup sugar, divided
- 1 tsp. baking powder
- 1/2 tsp. cinnamon
- 1 egg, lightly beaten
- 1/3 cup milk
- 1 Tbsp. canola oil
- 1 Tbsp. butter, melted and cooled
- 1/8 tsp. salt
- 2 cups frozen raspberries, thawed slightly
- 2 cups frozen blueberries, thawed slightly
Instructions
- In a large bowl, combine 1 cup flour, 2 tablespoons sugar, baking powder, salt and cinnamon.
- Add the egg, milk, butter and oil.
- Stir just until moistened (batter will be thick).
- Spread the batter evenly into the bottom of a 5-qt. slow cooker coated well with cooking spray.
- In the same bowl you used earlier (because why dirty another bowl?), combine the remaining 1/4 cup of flour and 1 cup of sugar.
- Add the berries and toss to coat.
- Spread the berry mixture evenly over batter.
- Cover and cook on high for 2 1/2 hours or until a toothpick inserted into cobbler comes out clean.
- Slow cooker times may vary.
- Serve warm with ice cream or whipped cream.
- Serves 6 generously.
