This Spanish Rice with Beef is a great recipe that is simple and filling. On a day when you are running short on time and energy, this meal can be prepared and on the table in about a half an hour. Serve with a fresh salad and bread and you’ve got yourself a well balanced week night dinner! This also tastes great topped with freshly grated sharp cheddar cheese.
Spanish Rice with Beef
Ingredients
- 2 lbs. 90% lean fresh ground beef
- 1 large onion, diced
- 1 green pepper, finely diced
- 2 cloves garlic, minced
- 1 28 oz. can crushed tomatoes
- 2 cups instant brown rice
- 2 cups water
- 1 tsp. beef bouillon or beef bouillon cube
- 1 tsp. seasoned salt
- 1/2 tsp. black pepper
- 3 Tbsp. chili powder
- 1/2 tsp. cumin
Instructions
- In a large skillet with a lid, brown ground beef with onion, pepper and garlic until no pink remains.
- Drain excess fat.
- Add crushed tomatoes, chili powder, cumin, salt, pepper, and beef bouillon.
- Stir well on medium/high heat until bubbly.
- Add water and rice.
- Stir well and cover.
- Simmer on low for 30 minutes.
- Adjust seasonings to your taste. More salt, pepper, etc.
- Serve with a fresh salad and bread.
