I love serving my family a warm breakfast on a cold morning. The last few mornings have been quite chilly here and I was in need of something other than a cold bowl of cereal to get my little ones up and out of bed. I love apples and since it’s apple season, I have been cooking and baking with apples on a daily basis. Many of the apples my family and I picked at the apple farm earlier this fall have gone into wonderful, comforting desserts like Apple Pie and Old Fashioned Apple Crisp. Ending a cool evening with a warm apple dessert is great, but sometimes I like to start my day with apples too!
This Spiced Apple Baked Oatmeal tastes and smells like your favorite Autumn apple desserts. Applesauce, freshly chopped apple, cinnamon and nutmeg are baked with old fashioned oats to make a cozy fall breakfast. Your kitchen will smell delicious as this oatmeal bakes in the oven while your family is getting up and ready for the day. To save time in the morning, this can be made the night before and then pulled out of the refrigerator when you first wake up and baked as usual. This oatmeal freezes very well, so doubling this recipe works out very well if you are stocking your freezer.

Ingredients
- 3 cups old fashioned oats
- 3/4 cup brown sugar
- 1 cup applesauce (homemade is wonderful)
- 1 large Cortland apple (or your favorite baking apple) peeled, and chopped into pieces
- 1 cup milk
- 2 eggs, lightly beaten
- 1/4 cup butter, melted and cooled
- 2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 2 tsp. baking powder
- 1 tsp. pure vanilla extract
- 1 tsp. salt
Instructions
- Preheat the oven to 350 degrees.
- In a large bowl, mix together all of the ingredients.
- Spread into a 8 x 8 inch baking dish or deep dish pie plate.
- Bake for 35 to 40 minutes or until the center looks set.
- Serves 6.
- *If you are freezing this- prepare as usual, store and freeze the oatmeal in a covered freezer friendly container unbaked. When you are ready to use the frozen oatmeal, defrost in the refrigerator overnight and bake as usual!

Shannon, this is the perfect hot morning breakfast for sure! I love the crisp Fall air…but oh man! Super nippy when the kids are heading out the door… 23 degrees!
By the way, my little one loves the Scavenger Hunt page you designed. He was able to circle them all. Even when we were out yesterday, he told me he wished he had another paper with him because he just saw a pine cone down on the ground. Super cute, thank you.
