Ahh, chocolate. There’s just no way around it. I love it. Seeing as though I have been very good on my “diet” and watching what I am eating so far this year, I really haven’t made anything chocolatey because I’m pretty sure I’ll want to eat it. My poor little kiddos have been kind of looking for a little dessert after dinner lately, so I thought I would bake up a few dozen cookies. The best part about most cookies is that they usually freeze pretty well. For me that means I can have one cookie and the rest can get frozen and be out of sight and out of my mind! 🙂 As I was chopping up some strawberries for a snack yesterday, I had an idea. I was thinking that some of those sweet berries would be perfect in some Chocolate Chip Cookies…and I was right!
Chocolate & Strawberries. Is there any better flavor combination out there (maybe chocolate & more chocolate, but anyways…)? This cookie dough takes only few minutes to put together and these cookies make a great last minute dessert. I’m so happy the strawberries in the grocery store have really good lately. Weren’t these berries pretty?!
Once the dough is mixed, you just have to add your semi sweet chocolate chips (dark chocolate chips would be delicious too) and give them a quick stir in your mixer. I did remove the bowl from my mixer to add the strawberries though. I started by using a plastic spoon to mix the berries in well, but about halfway through I decided to just do it with my hands.
It was easier to sort of push the berries into the dough and move it around evenly without completely destroying those little bits of strawberry. Don’t be afraid to get your hands dirty here…it will be worth it!
I used my handy (affiliate link—>) cookie scoop to evenly place the dough onto the parchment lined baking sheets and then into the oven they went.
The smell of chocolate and strawberries baking in the oven was so delicious! My whole house smelled so good!
These cookies are great served warm or room temperature with a nice cold glass of milk. Even though this was suppose to be for dessert, my children ended up having these for their after school snack…and so did I!
If you’d like to add a little sweetness to your loved one’s day, bake them a few dozen of these Strawberry Chocolate Chip Cookies!
Ingredients
- 2/3 cup shortening
- 2/3 cup unsalted butter, softened
- 1 cup sugar
- 1 cup brown sugar (packed)
- 2 eggs
- 2 1/2 tsp. vanilla
- 3 1/2 cups all purpose flour
- 1 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1 tsp. salt
- 2 1/2 cups semi sweet chocolate chips
- 3/4 cup finely chopped (the smaller the better) fresh strawberries
Instructions
- Preheat your oven to 375 degrees.
- In your Kitchen Aid Mixer, beat the shortening and butter together until light and fluffy.
- Add the sugars and beat together.
- Add the eggs one at a time, scraping down the sides and beating after each addition.
- Add the vanilla and stir.
- Slowly add the flour, soda, powder and salt and mix until a dough comes together.
- Add the chocolate chips and stir quickly to incorporate.
- With a spoon or by hand carefully mix in the finely chopped strawberries. making sure to even distribute them. If you don't spread them through the dough evenly, you will have big mushy spots in your cookies.
- With a cookie scoop or large spoon, drop dough by the Tablespoonfuls onto a parchment lined baking sheet 2 1/2 inches apart and bake for 10-12 minutes (ovens vary) or until the edges are golden. They will harden more when cooling.
- Remove from the oven and let rest on the baking sheet for 2 minutes.
- Move the cookies to a cooling rack.
- Serve warm or room temperature with milk.
- Makes 4 dozen cookies.
- *To freeze, cool completely and store in a freezer friendly container or plastic bag.
