Breakfast is the most important meal of the day right? It wakes you up and gets you going first thing in the morning. A warm breakfast is even better! There’s something about waking up after being snuggled all comfy and cozy in your warm bed to find that there is a something delicious waiting for you fresh from the oven. My children love baked oatmeal, so today I am sharing one of our new recipes, Strawberry & Nutella Swirled Baked Oatmeal! You’re going to love it!
Even though it’s ridiculously cold and snowy here in Western new York, it’s strawberry season in sunny Florida this time of year. I’ve been stocking up on fresh Florida strawberries that I’ve been finding at my grocery store right now because my children just love them! They are perfect for snacks, on top of cereal and in yummy baked oatmeal!
Because I am away this weekend in Florida at the #FBFOrl, I wanted to make sure I had at least one tasty strawberry meal ready for my kiddos. This baked oatmeal is so easy to prepare and you can even make it ahead of time and freeze it. Fresh, juicy chopped strawberries are swirled into a creamy old fashioned oat mixture with delicious Nutella and then baked until warm and slightly crisp around the edges for a delicious breakfast. It’s like a special treat, and we love it on the weekends!
If you find yourself in Florida in the next month or so, don’t miss the Parkesdale Farm Market in Plant City! It’s very easy to get to and it’s one of our family’s favorite stops when we head to Florida each Spring. We love to shop their wonderful fresh, local produce for meals that we are going to prepare on our vacation and you cannot leave without getting some of their Fresh Strawberry Shortcake! This is a very nice local place and when they serve their World Famous Strawberry Shortcake or their Strawberry Milkshakes, a line forms all the way out around the parking lot. Out of all the things to do on vacation in Florida, this one of my children’s most requested thing to do! It’s absolutely delicious, make sure you don’t miss it!
Ingredients
- 1 1/2 cups fresh strawberries, chopped + a few whole sliced berries for garnish
- 3 cups old fashioned oats
- 1/2 cup brown sugar
- 1 cup milk
- 2 eggs, lightly beaten
- 1/4 cup butter, melted and cooled
- 1/2 tsp. cinnamon
- 2 tsp. baking powder
- 1 tsp. pure vanilla extract
- 1 tsp. salt
- 1/4 - 1/3 cup Nutella
Instructions
- Preheat your oven to 350 degrees.
- In a large bowl, mix together all of the ingredients.
- Spread the oatmeal mixture into a 8 x 8 inch baking dish or deep dish pie plate.
- Drop Nutella onto the oatmeal in lines.
- Swirl and pull it through the oatmeal with your spoon.
- Bake for 30 minutes or until the center looks set.
- Serve warm with a few freshly sliced strawberries on top.
- Serves 6.
- *If you are freezing this- prepare as usual and freeze unbaked. When you are ready to use the frozen oatmeal, defrost in the refrigerator overnight and bake as usual! You can also make this the night before and just store in the refrigerator until ready to make in the morning. Since it will be cold, additional minutes may be needed for baking.
